Recipes Recipe - Famous Recipes - Steak and Kidney Pudding

Really traditional winter meal. I hate kidney so I just use steak. Steak and Kidney Pudding 3 tbs vegetable oil 1 1/2 lbs stewing steak cut into chunks 8oz ox kidney, cut into chunks 8oz chopped onion 3tbs white flour 1 pint(20fl oz) beef stock 1 tbsp strong mustard 10ozwhite self raising flour or plain flour with 1 tsp baking powder 5oz shredded suet grated rind of a lemon butter for greasing dish 1. Brown steak and kidney in flameproof casserole dish Remove when browned 2. Brown onions lightky. Off the heat, stir in plain flour, stock, mustard and salt and pepper. Bring to boil and replace steak and kidney 3. Cover casserole and cook at 325 F 170 C for 2 hours until meat is tender. 4. Mix SR flour,suet, grated lemon rind and salt and pepper. Bind to smooth dough with 6-7 fl oz water. Knead until smooth 5.Roll out dough to 13 inch round. Cut out 1 quarter and reserve. Line a 3 pint greased pudding basin with large piece of dough, damping and overlapping the sides to join. 6. Sppon in the meat and juices and top the pudding with the reserved dough rolled out to a round damping edgeto seal. 7. Cover with greaseproof paper and kitchen foil. Tie securely with string 8. Place in large pan on a heat proof saucer then fill pan with boiling water au to half way up the basin. Boil for 1 and a half to 2 hours topping up water as neccessary.
