Beefy Hoagies
1 container (16 oz.) reduced fat sour cream
1/4 cup drained prepared horseradish
3/4 tsp. ground black pepper
1/2 tsp. salt, optional
6 (6 oz. ea.) hero rolls
9 cups lightly packed watercress, arugula or baby spinach leaves
3 lb. thinly sliced rare roast beef
1 red onion, cut paper thin
1. Stir together the sour cream, horseradish, pepper and salt. Cut rolls lengthwise, but not quite through,
so halves are still connected. To make room for filling, remove some of the bread center (save for another
use). Spread horseradish mixture on rolls.
2. Evenly divide the watercress among the bottom halves. Top with the roast beef and onion. Press the
sides together gently, cut in half crosswise and wrap each half tightly with freezer paper or foil.
Serves 12.
