Peanut Butter Frosting

3 tbs chunky peanut butter
2 tbs margarine or butter
1 cup sifted powdered sugar
1 tsp vanilla
1 tbs milk

In a small saucepan, melt peanut butter and margarine. Remove from
heat, stir in sugar, vanilla and milk. Add more milk, if necessary,
until spreading consistency. Makes about 1/2 cup.

Lemon Frosting

1 package (16 oz) confectioners' sugar
1/2 cup (1 stick) butter or margarine, softened
2 tbs fresh lemon juice
1 tsp grated lemon peel
2 tbs milk or half and half

In a large bowl. beat confectioners' sugar, softened butter, lemon
juice and lemon peel at medium low speed until smooth and blended.
Beat in 1 to 2 tbs of milk as needed for easy spreading consistency.
Increase speed to medium high, beat until light and fluffy. Makes 2
1/2 cups.

Famous Recipes - Chinese Almond Cookies



These delicate cookies melt in your mouth and are the perfect
finish for a picnic.

Chinese Almond Cookies

4 cups (1 L) all-purpose flour
2 1/2 cups (625 ml) sugar
4 tsp (20 ml) baking powder
1 tsp (5 ml) baking soda
1 lb (450 g) vegetable shortening
2 eggs, beaten
4 tsp (20 ml) almond extract
Almond halves for garnish
Additional egg for glaze

In a large bowl, sift the flour, sugar, baking powder and baking
soda together. Gradually beat in the shortening. When the
shortening is well blended, add beaten eggs and almond extract.
If mixture is sticky, add one or two more tablespoons flour. When
mixture is well blended, remove from bowl and separate into four
portions. Shape each portion into a log about 1 inch (2.5 cm) in
diameter. Wrap in plastic wrap and refrigerate for one hour.
Preheat oven to 350F (180C). Lightly grease baking sheets. Remove
logs from refrigerator and cut each log into pieces 3/4 inch (2 cm)
thick. Use your hands to roll each slice into a ball. Place the balls
on cookie sheets and flatten slightly with your finger tips. Brush
gently with beaten egg and place half an almond in the center of
the cookie. Bake for 12-15 minutes (do not allow cookies to brown,
they should be almond colored). Remove from oven and let cookies
cool on cookie sheets for about two minutes, then remove to racks
to cool completely. (They tend to crumble if you remove immediately
to racks.) Store in tightly covered tins. Makes 7-8 dozen.

LEMON CUT-OUT COOKIES

1 cup butter or margarine, softened
1 cup sugar
3 oz cream cheese, softened
1 egg yolk
2 Tbsp RealLemon lemon juice from concentrate
1 tsp vanilla extract
1/4 tsp salt
2 1/4 cups unsifted all-purpose flour

Glaze: 4 cups unsifted powdered sugar
1/4 cup RealLemon juice

Combine all cookie ingredients except flour; beat with electric mixer
until well blended. Blend in flour and beat until incorporated. Divide
dough in half; wrap in plastic wrap. Refrigerate at least 1 hour. On a
well-floured surface, knead one portion of dough into a smooth ball.
Roll out to 1/8th inch thickness. Cut out with various cookie cutters.
Place 1 inch apart on ungreased baking sheets. Bake in preheated 375*F
oven for 7 to 10 minutes, or until lightly browned at edges. Cool.
Repeat with remaining dough.

Glaze: Using electric mixer, combine powdered sugar and lemon juice. Add
additional lemon juice to get thinner spreading consistency.

Ice cookies with glaze and let glaze set up. Makes 5 dozen 2-inch
cookies.

Zucchini and Carrot Cake

1 1/4 cups sugar
2 eggs
2 teaspoons vanilla essence
1/2 CUP Oil
2 teaspoons Parisian essence
3 cups finely grated zucchini, squeezed dry
1 cup carrot, finely grated
1/2 cup walnuts, chopped

Sift together:
1 cup self-raising flour
1/2 cup Plain flour
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
2 teaspoons cinnamon

Lemon Icing
3 Tbsps Margarine
1/4 cup honey
125g ( 4 ozs) cream cheese, softened
1 cup powdered milk
1/2 teaspoon vanilla essence
1 teaspoon grated lemon rind

Method
1. Place eggs in food processor. Beat until fluffy, gradually adding
sugar, beat until thick,

2. Pour the mixture into a large bowl, add grated carrot and zucchini.

3. Add oil and essences. Mix well. Add sifted dry ingredients,
including the walnuts.

4. Pour into a LINED and greased 2 Quart microwave safe casserole dish
or cake dish.

5. Place casserole in microwave.

6. Cook on HIGH for 15 minutes.

7. Allow to cool slightly before removing from dish.

8. Ice with lemon icing.

Lemon Icing
1. In a food processor place all ingredients, beat until smooth.

2. Spread over cake.

BANANA MALLOW PIE

Crust:
1/3 cup margarine
3 cups coconut

Melt margarine in skillet over low heat. Add coconut. Stir frequently
until golden brown.

Spread in bottom of a 9 x 13 pan. (save a little coconut for the top)
Refrigerate.

Filling:
2 4 oz. pkgs vanilla pudding
2 cups thawed cool whip
3 cups miniature marshmallows
4 bananas

Prepare pudding as directed on the package using 3 1/2 cups milk.

Cover and refrigerate until slightly thick.

Mix until well blended. Mix in cool whip and marshmallows. Spread half
of mixture over crust.

Slice bananas evenly over pudding. Top with remaining pudding. Sprinkle
the remaining browned coconut over the top.

Refrigerate until served.

Serves 12 - 16.

Toffee Pecan Bars

1 Box (18.25 oz) Yellow Cake Mix
1/3 Cup Butter, softened
1 Egg, beaten
1 Can Sweetened Condensed Milk
1 Egg
1 tsp Vanilla Extract
1 Cup Pecans or Walnuts, chopped
1 Heath Bar, chopped (or 1/2 cup Heath Bits)

Mix together cake mix, butter, and beaten egg. Pat batter into a greased
13 x 9-inch cake pan and set aside.

Combine condensed milk, egg and vanilla extract together; Beat well.
Stir in the nuts and Heath bar. Pour over batter creating a crust.

Bake at 350 degrees for 25 minutes. Cool and cut into bars.

Herbed Seafood Skewers

1/4 cup canola oil
1/4 cup lemon juice
1 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon chicken bouillon granules
1/2 teaspoon dried basil
1/2 teaspoon salt
3/4 pound uncooked large shrimp, peeled and deveined
1/2 pound sea scallops
1 each large green and sweet red pepper, cut into 1-inch pieces
1 small zucchini, cut into 1/4-inch slices
1 small yellow summer squash, cut into 1/4-inch slices
Hot cooked rice, optional

In a bowl, combine the first seven ingredients. Divide marinade between
two large resealable plastic bags. Add the shrimp and scallops to one;
place vegetables in the other bag. Seal and turn to coat; refrigerate
for 3-4 hours.

Drain shrimp and scallops; discard marinade. Drain vegetables, reserving
marinade for basting. On eight metal or soaked wooden skewers, alternate
the shrimp, scallops, peppers and squash. Grill, uncovered, over medium
heat for 6 minutes or until shrimp turn pink, turning once and basting
occasionally. Serve over rice if desired. Yield: 4 servings.

Nutritional Analysis: One serving (2 kabobs, calculated without rice)
equals 217 calories, 10 g fat (1 g saturated fat), 120 mg cholesterol,
684 mg sodium, 10 g carbohydrate, 3 g fiber, 22 g protein.
Diabetic Exchanges: 3 lean meat, 2 vegetable.

"Lazy Lasagna"

1-1/2 Cups noodles
1 C. spaghetti sauce
3/4 C. Shredded Mozzarella Cheese
1/2 C. Cottage Cheese
2 T. Grated Parmesan Cheese (I only use 1 T.)
Oregano and Garlic Powder to taste

Cook noodles according to package directions. Warm the spaghetti sauce
(I do this in a 4 C. measuring cup in the microwave.) Stir in the
cottage cheese and Mozzarella. Fold in noodles. Pour into a greased 1
quart casserole. Sprinkle with Parmesan cheese, oregano and garlic
powder. Bake, uncovered, at 375 degrees for 20 minutes or until bubbly.
Makes 2 servings.

Crescent Dogs

8 hot dogs
4 (3/4-oz) Slices American Cheese, each cut into 6 strips
1 Tube (8-oz) Refrigerated Crescent Dinner Rolls

Preheat oven to 375 degrees.

Slit hot dogs to within 1/2 inch of ends; insert 3 strips of cheese into
each slit.

Separate dough into triangles. Wrap dough triangle around each hot dog.

Place on ungreased cookie sheet, cheese side up.

Bake at 375 degrees for 12 to 15 minutes or until golden brown.

FRENCH ONION PAN ROLLS

2 loaves (1 pound each) frozen bread dough, thawed
1 cup grated Parmesan cheese
1 envelope onion soup mix
1/2 cup butter or margarine, melted

Divide the bread dough into 20 portions; shape each into a ball. In a
bowl, combine the Parmesan and onion soup mix. Place butter in another
bowl. Roll each ball in melted butter, then in cheese mixture. Arrange
in a greased 13x9x2-inch baking dish. Lightly cover with plastic wrap
and let rise in a warm place until doubled, about 45 minutes. Bake at
350*F for 30 to 35 minutes, or until golden brown. Remove from pan to a
wire rack. Serve warm. Makes 20 rolls.

Mediterranean Marinated Tomatoes
Makes (4) 1/2 -cup servings

3 Tomatoes, each cut into 6 wedges
1/4 Cup Lemon Juice (fresh works best)
1 tsp Sugar
1 tsp Canola Oil
1/4 tsp Dried Savory
1/4 tsp Salt
1/8 tsp Ground Cayenne Pepper
1 Clove Garlic, minced

Place the tomato wedges in a medium bowl. Combine lemon juice and
remaining ingredients, stirring with a whisk. Pour dressing over
tomatoes; toss gently to coat. Let stand 1 hour, stirring occasionally.

Serve at room temperature with a slotted spoon.

Ramen Noodle Salad

2 (3 oz) packages ramen noodles, chicken or beef flavor
8 oz (half a package) cabbage chopped for cole slaw
8 oz. pkg. julienned carrots
1 cup dry roasted peanuts
1 cup dry roasted sunflower seeds
3 Tblsp. white sugar
1/4 cup vegetable oil
1/3 cup cider vinegar
1 ramen noodle seasoning package
10 squirts soy sauce
sesame oil, to taste (I give it about 10 squirts) Cajun seasoning (I use
Slap Ya Mama, but Tony's is good too)

Break apart the ramen noodles and drop them into a large salad bowl. Add
cabbage, carrots, peanuts and sunflower seeds, in that order. In a
separate bowl, whisk together the sugar, oil, vinegar, seasoning packet,
soy sauce, sesame oil and Cajun seasoning. Pour over salad and toss to
coat. This salad gets better as it sits and the ramen noodles soften, so
refrigerate at least one hour.

This is another one I used to eat a lot as a Weight Watcher's version.
It's incredibly simple and tasty -- Lots of versions of it floating
around, and it's another one that goes fast in the summertime. If you're
not into the kick of Cajun seasoning, use garlic salt instead of garlic
powder. Dive in!

Summer Chicken Salad

2 cups cubed cooked chicken
1 cup small red grapes
1 (8 oz) can pineapple tidbits, drained
2 celery ribs, chopped
1/4 cup pecans
1/3 cup light mayo-type salad dressing
1/8 tsp. celery seed
garlic powder, to taste
Cajun seasoning (Slap Ya Mama), to taste

Combine chicken, grapes, pineapple, celery and pecans in a medium bowl
and set aside. In a small bowl, combine salad dressing, celery seed,
garlic powder and Cajun seasoning. Stir into chicken mixture. Cover and
refrigerate until ready to serve.

"Fresh" Grilled Chicken

1 (1-1/2 to 3 lb) Chicken, cut up

For marinade:
Zest from 1 Tangerine
Zest from 1 Lime
3 Tbs Canola Oil
1 Garlic Clove, crushed
1 tsp Salt
1/2 tsp Black Pepper
1/8 tsp Cayenne, or to taste

Combine all ingredients for marinade in mixing bowl - transfer to large
zip lock bag. Add cleaned chicken parts and marinate, refrigerated, for
2 hours (or up to 12 hours - overnight would be too long).

Grill until chicken is done and juices run clear. Discard marinade.

Grilled Meat Loaf

1/2 cup ketchup
1/2 cup quick-cooking oats
1/4 cup chopped green pepper
1 egg
1 teaspoon dried parsley flakes
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 pounds ground beef
Additional ketchup, optional

In a large bowl, combine the first nine ingredients. Crumble beef over
mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty
foil in center of grill. Place meat loaves on foil (do not seal foil).
Grill, covered, over indirect medium heat for 50 minutes or until meat
is no longer pink and a meat thermometer reads 160°. Brush tops with
additional ketchup if desired. Let stand for 10 minutes before slicing.
Yield: 2 loaves
(4 servings each).

Hot Fudge Sauce

1/4 cup water
1 cup light corn syrup
1 1/3 cup sugar
1/4 tsp salt
4 oz unsweetened chocolate, coarsely chopped
1/2 cup alkalized (Dutch process) cocoa powder
1/4 cup (1/2 stick) unsalted butter
1/4 cup whipping cream
1 tbs vanilla extract

Combine water, corn syrup and sugar in a nonreactive pan and bring
to a boil, stirring often, until all sugar crystals have melted.
Boil 1 min without stirring. Remove from heat. Add salt and
chocolate and allow to stand 2 min until chocolate has melted, then
whisk smooth. Stir cocoa into mixing bowl and stir in enough liquid
mixture to make paste. Stir cocoa paste smoothly back into syrup.
Whisk in butter, cream and vanilla. Store sauce in tightly covered
jar in refrigerator. Reheat over simmering water before serving.
Makes about 2 cups.

3 large lemons
1 tbs cornstarch
6 tbs butter or margarine
3/4 cup sugar
4 large egg yolks

Grate 1 tbs of lemon peel. Squeeze lemone to make 1/2 cup of juice.
In 2 quart saucepan, with a wire whisk, mix cornstarch, lemon peel and
juice until smooth. Add butter and sugar. Heat to boiling, over
medium heat. Boil 1 min, stirring constantly. In a small bowl, beat
egg yolks lightly. While still beatinging add a small amount of hot
lemon mixture. Pour the egg mixture into the saucepan, beating
mixture rapidly. Reduce heat to low, cook, stirring constanly, about
5 min or until thick (do not boil). POur mixture into medium bowl.
Press plastic wrap onto surface to keep skin from forming as it
cools. Cool to room temp. Refrigerate 3 hours or up to 3 days.
Makes about 1 cup.

before cutting.

Snicker Munch Bars

2 cups salted dry roasted peanuts
1/2 cup butter (1 stick)
1/2 cup granulated sugar
1/4 cup light corn syrup

1. Spread peanuts out on a baking sheet and heat them up in your oven
set on 300 degrees. This will warm up the peanuts so that they don't
cool the candy too quickly when added later. There's no need to
preheat the oven.

2. Melt the butter in a medium saucepan over medium/low heat.

3. Add sugar and corn syrup and simmer, stirring occasionally. Put a
candy thermometer in the mixture and watch it closely.

4. When the mixture reaches 300 degrees add peanuts and stir well
until all of the peanuts are coated with candy. Pour the candy onto
the warm baking sheet and spread it flat. When the candy cools, break
it into chunks and store it in a covered container.

Makes the equivalent of 12 1.5-ounce candy bars.

1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter, softened
1/2 cup firmly packed brown sugar

1 egg
3 envelopes nestle choco bake
1/2 cup quick or old fashioned oats, uncooked
1/2 cup shredded coconut

Preheat oven to 350 degrees. In a small bowl, combine flour, baking
soda, baking powder and salt, set aside. In a large mixer bowl,
beat butter, brown sugar, sugar and egg until creamy. Blend in
nestle choco bake. Stir in flour mixture, oats and coconut until
well blended. Drop by slightly rounded measuring tablespoonfulls
onto ungreased cookie sheet. Bake 10 to 12 min or until firm. Let
stand 2 min on cookie sheet. Cool completely. Makes about 1 1/2
dozen cookies.

5 pounds chicken wings
Large resealable plastic bag
1 jar (12 ounce) apricot preserves
1 cup soy sauce
2 cloves garlic, minced
1 tablespoon fresh ginger minced or 1 teaspoon ground ginger powder
Thoroughly clean and rinse chicken. Pat dry, cut wings at joint into two pieces and
place in bag. Combine remaining ingredients in a medium bowl.
Pour over chicken and refrigerate at least 3 hours or overnight.

Grill for 25 minutes, turning once, until skin is crisp and

1 2/3 cup graham cracker crumbs
1/2 cup butter or margarine, melted
2 2/3 cups (7 oz package) flaked coconut
1 1/4 cups (14 oz can) carnation sweetened condensed milk
1 cup red raspberry jam or preserves
1/3 cup finely chopped toasted walnuts
1/2 cup nestle semi sweet morsels, melted
1/4 cup chopped nestle white baking bar, melted

In medium bowl, combine graham cracker crumbs and butter. Spread
evenly over bottom of 13x9" baking pan, pressing to make compact
crust. Sprinkle coconut over crust. Pour sweetened condensed milk
evenly over coconut. Bake in preheated 350 degree oven for 20-25
min or until lightly browned, cool. Spread jam over coconut layer,
chill 3 to 4 hours. Sprinkle with walnuts. Drizzle dark chocolate
then white chocolate over top layer to make lacey effect, chill.
Cut into 3x1 1/2" bars.

Triple Fudge Cake

1 box Devils food cake mix (2 layer)
1 small box chocolate pudding (not instant)
1 small pkg. chopped pecans
1 small pkg. semi-sweet chocolate chips

Cook pudding as directed on package while pudding is hot, mix in the
devils food cake mix (dry). Mix well by hand, pour into a greased 13
X 9 pan, sprinkle pecans and chocolate chips evenly on top, bake at
350° F. for 30 minutes, serve warm with ice cream.
If you really want to serve a chocolate lovers delight, pour homemade
hot fudge on top.

Hot Fudge Delight:
1/2 cup butter or margarine
2 squares (1 ounce each) unsweetened chocolate
2 cups sugar
1 cup light cream or evaporated milk
1/2 cup light corn syrup
1 teaspoon vanilla extract

In a saucepan, melt butter and chocolate. Add sugar, cream, corn
syrup and vanilla. Bring to boil, stirring constantly. Boil for 2
minutes. Remove from the heat. Allow to cool, will thicken as it
cool. Serve warm or cold over ice cream cake. Refrigerate leftovers.
Yield: 3 - 3 /1/2 cups.

This is a recipe I used for a children's camp when we were studying different cultures.

Mock Sangria
1 lemon, thinly sliced
1 orange, thinly sliced
1 lime, thinly sliced

1 cup sugar
1 cup water

1 1/2 quarts red grape juice
2 liters Ginger Ale

Bring water and sugar to a boil. Cool to room temperature. Stir in fruits and refrigerate in a glass or plastic bowl, covered. Refrigerate over night. Remove fruits and set aside. Stir in grape juice and ginger ale. Then, add fruits. The students really liked this alot. It is good any time of year. If you want the white sangria, use a lemon, a peach, strawberries and any other fruit you desire with white grape juice instead of the red grape juice.

I use this recipe below for catering for weddings and proms when the self-serving fountain punch bowls are used. It does not have fuit sediment which can clog the fountain.

Mock Champagne
1 1/2 quarts white grape juice
2 litre raspberry or cranberry ginger ale
Chill, mix and serve.

Celebrate Canada Day with this Mediterranean-influenced summer
favourite in which crisp grilled golden potatoes, red peppers and
chopped sun-dried tomatoes absorb the sweet flavour of white
balsamic vinegar.

To celebrate the occasion, use a maple leaf cutter and cut out
leaves from the red peppers.

GRILLED POTATO SALAD

6 Yukon gold potatoes
2 Red peppers, quartered
2 tbsp Extra-virgin olive oil 30 mL
2 tbsp Chopped fresh basil 30 mL
1 tbsp Chopped fresh rosemary 15 mL
1/4 tsp Each salt and pepper 1 mL
WHITE BALSAMIC DRESSING:
1/4 cup Extra-virgin olive oil 50 mL
2 tbsp White balsamic vinegar 30 mL
2 tbsp Chopped sun-dried tomatoes in oil, drained 30 mL
1 Clove garlic, minced
1/3 cup Halved pitted kalamata olives 75 mL
2 tbsp Chopped fresh basil 30 mL
15 mL Capers 1 tbsp

Cut each potato into 8 wedges. Place in a large bowl with red
peppers. Add oil, basil, rosemary, salt and pepper and toss to coat
well.

Place potato wedges and peppers on greased grill over medium-high
heat and grill for about 20 minutes, turning once, or until golden
and tender. Thinly slice red peppers and return to bowl with grilled
potato wedges.

White Balsamic Dressing: Meanwhile, whisk together oil, vinegar,
tomatoes and garlic. Pour over grilled potatoes and peppers. Add
olives, basil and capers. Toss gently to combine. Serve warm or
cover and refrigerate for up to 2 days. Bring to room temperature
and toss well before serving.

Makes 6 to 8 servings.

TIP: You can substitute 1 jar (340 mL) roasted red peppers, drained
and sliced, for the 2 red peppers.

*Decoration:
for snow:* 1 cup confectioner's sugar, 1/2 eggwhite and 1/2 tsp lemon juice.
use m&m's, peppermint candy, Bassett's Licorice, gummy bears, smarties and
alot of imagination!
*glue:* melt sugar in a large frying pan, and dip the edges into the sugar
and put togther with mating part - *very quickly*.

*Heat sugar, molasses, butter and spices in a pot on low heat. Pour in the
milk and let the mixture cool.
Mix the bakingsoda into the flour and and the flour mixture into the
liquids. Make a dough.
Sprinkle some flour on top and cover with towel or plastic wrap. Place in
refrigerator for 24 hours.
While dough is sitting, design a house and cut out the walls, roof, doors,
windows chimney etc.. out of cardboard.
Turn on the oven to 350 °F (175 °C)
Roll out dough (not too thin!) and place cardboard pieces on top of dough
and cut around the edge into wanted shapes.
Bake until golden brown for about 12-15 min.
Put the house together and decorate!*

2 cups milk*

*Rinse and cut core from cabbage. Put cabbage in sauce pot and boiling
water to cover and 1 tsp salt. Cover and simmer about 5 minutes, or until
leaves are softened. Carefully separate cabbage leaves and set aside on
absorbent paper to drain. Filling- mix together veal, beef, 1 1/4 c. milk,
bread crubls, onion, 2 1/2 tsp salt, nutmeg.
Cabbage Rolls- place a small cabbage leaf in the center of a large leaf.
Drop about 1/2 c. of the meat mixture onto the center of each small leaf.
(Meat mixture will drop more readily from a moist spoon or cup.) Roll each
leaf, tucking ends in toward center. Fasten securely with wooden picks or
tie with cleaan string. Bring water and salt to boil in pot. Add cabbage
rolls one at a time so water continues to boil. Reduce heat, cover and cook
20 minutes, or until tender. Carefully remove rolls with a slotted spoon.
Remove wooden picks or string. Place rolls in a serving dish and serve with
gravy and lingonberry preserves.*

This savory pie is good warm, chilled, or at room temperature,
making it as versatile as it is delicious.

Spinach and Ricotta Tart

2 lbs (900 g) spinach, fresh or frozen
16 oz (450 g) ricotta cheese
1 small onion, diced
3 eggs
2 Tbs (30 ml) fresh basil leaves, chopped
Salt and freshly ground pepper to taste
A few gratings nutmeg
2 sheets phyllo dough* (or your favorite pastry dough recipe)
3 medium tomatoes, sliced
2 Tbs (30 ml) grated Parmesan cheese

* Available in most supermarket's frozen food sections.

If using fresh spinach, wash thoroughly and pack into a covered
saucepan with the water that clings to the leaves. Cook over high
heat about 1 minute, until the leaves are wilted. Drain in a colander
and squeeze to remove as much water as possible. If using frozen
spinach, thaw and squeeze to remove as much water as possible.
Chop the spinach finely and combine with the ricotta, onion, eggs,
basil, salt, pepper, and nutmeg in a large bowl, mixing to combine
ingredients. Place the two sheets of phyllo on a 9-inch (22 cm)
quiche pan or pie pan. Pour in the ricotta mixture. Trim the phyllo
so that 2 inches (5 cm) of dough hang over the edge of the pan,
and roll this up to resemble the crust of a pie. Arrange the tomato
slices on top of the ricotta mixture. Bake in the lower third of a
preheated 400F (200C) oven for 25 minutes. Sprinkle the Parmesan
cheese on top and bake an additional 15 minutes, until the tart is
firm in the center and a knife point inserted in the center come out
clean. Let rest 15 minutes before serving. Serve warm, chilled, or
at room temperature. Serves 6 to 8.

22 crisp oatmeal cookies
3 tablespoons cold unsalted butter, cut into small pieces

1 teaspoon granulated sugar
1 tablespoon whipping cream
1-1/2 cups whipping cream
2 tablespoons granulated sugar
Chocolate coffee beans or mocha beans

Directions
1. For crust, lightly butter a 9-inch springform pan. Set aside. In a
food processor bowl, process cookies until finely crushed (should have 2
cups crumbs). Add butter, the 1 tablespoon brown sugar, and the
cinnamon; process until mixture is combined. (Or crush cookies in a
plastic bag with a rolling pin. In a bowl, combine cookie crumbs with
the1 tablespoon brown sugar and the cinnamon. Using a pastry blender,
cut in the butter until mixture is well mixed.)

2. Press the crust mixture onto the bottom and 1-1/2 inches up the side
of the prepared pan. Bake in a 375 degree F oven for 8 minutes or until
firm. Cool completely on a wire rack.

3. For filling, in a large bowl, beat cream cheese and the 1 cup brown
sugar with electric mixer until well combined. Add eggs all at once and
beat on low speed until just combined.

4. Stir in liqueur or milk and vanilla. Dissolve the 2 tablespoons
espresso coffee powder in Irish whiskey or milk. Add to cream cheese
mixture; stir until just combined. Pour into cooled crust.

5. Bake in a 350 degree F oven about 50 minutes or until center appears
nearly set when you shake it. Remove from oven. Cool 15 minutes. Loosen
crust from side of pan. Cool 30 minutes more; remove side of pan. Cool 1
hour. Cover and chill at least 6 hours.

6. For topping, dissolve the 1 teaspoon espresso coffee powder and the 1
teaspoon granulated sugar in the 1 tablespoon whipping cream. In a
medium bowl, beat the 1-1/2 cups whipping cream with the 2 tablespoons
granulated sugar until stiff peaks form (peaks stand straight). Fold in
espresso mixture. Spread on top of chilled cheesecake. Garnish with
chocolate coffee beans. Let stand at room temperature for 15 minutes
before serving. Makes 12 to 16 servings.

vanilla. Fold in cranberries, coconut and the remaining chopped
pecans. Spread over partially baked crust. Bake 25 to 30 min more

while warm. Cool completely. Makes 16 bars.

3 medium sized firm cucumbers
1/2 cup (125 ml) orange juice
1 Tbs (15 ml) grated orange zest
1 tsp (5 ml) cornstarch (cornflour)
Salt and freshly ground pepper to taste

Peel the cucumbers and slice them in half lengthwise. Scoop out
the seeds with a small spoon, and slice the cucumbers into 1/2-inch
(1 cm) pieces. Put in a pot with enough water to cover and bring to
a boil. Reduce the heat and simmer for 5 minutes, until tender but
firm. Meanwhile, mix the cornstarch with 2 or 3 tablespoons of the
orange juice, and put this mixture along with the rest of the orange
juice and the orange zest in a saucepan large enough to hold the
cooked cucumbers. Heat over moderate heat, stirring constantly,
until the sauce thickens and becomes translucent. Season with the
salt and pepper (hint: this sauce can take quite a bit of pepper and
is better if it is slightly spicy). Drain the cucumbers and add them
to the sauce, tossing to coat the cucumbers thoroughly. Serve
chilled or at room temperature. Serves 4 to 6.

Ingredients
6 eggs
1 cup butter
1 8-ounce carton dairy sour cream
3-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 3/4 cups granulated sugar
1 tablespoon finely shredded tangerine or orange peel (set aside)
1/4 cup tangerine or orange juice
2 teaspoons vanilla
1/4 cup granulated sugar
Tangerine Glaze (see recipe below)
Sifted powered sugar (optional)
Sweetened Tangerine Whipped Cream (see recipe below) or creme fraiche
(optional)
Fresh raspberries (optional)

Directions
1. Separate egg yolks from whites. Allow eggs, butter, and sour cream to
stand at room temperature for 30 minutes. Meanwhile, grease and lightly
flour a 10-inch fluted tube pan. Set aside. In a medium bowl, combine
flour, baking powder, baking soda, salt, and nutmeg. Set aside.

2. In a large mixing bowl, beat butter with an electric mixer on medium
to high speed for 30 seconds. Gradually add the 1-3/4 cups granulated
sugar, beating about 10 minutes or until very light and fluffy. Add egg
yolks, one at a time, beating 1 minute after each addition and scraping
bowl frequently. Beat in tangerine juice and vanilla. Add flour mixture
and sour cream alternately to beaten mixture, beating on low to medium

3. Thoroughly wash beaters. In another large mixing bowl, beat egg
whites with an electric mixer on medium speed about 1 minute or until
soft peaks form (tips curl). Gradually add the 1/4 cup granulated sugar,
1 tablespoon at a time, beating on high speed about 4 minutes more or
until mixture forms stiff, glossy peaks and sugar dissolves. Immediately
fold half of the whites into batter, then fold in remaining whites
(batter will be very thick). Spoon batter into prepared pan.

4. Bake in a 325 degree F oven for 65 to 75 minutes or until a wooden
toothpick comes out clean. Cool in pan on a wire rack for 15 minutes.
Remove from pan and place on wire rack set over waxed paper. Brush warm
Tangerine Glaze all over warm cake. Cool completely. Sprinkle with
powdered sugar before serving, if you like. Serve with Sweetened
Tangerine Whipped Cream or creme fraiche and berries, if you like. Makes
16 servings.

Tangerine Glaze: In a small saucepan, combine 1/3 cup sugar and 1/3 cup
tangerine or orange juice. Bring to a simmer, stirring till sugar
dissolves. Makes about 1/2 cup.

Sweetened Tangerine Whipped Cream: In a chilled medium bowl beat 1 cup
whipping cream and 1 tablespoon sifted powdered sugar with an electric
mixer on medium speed until soft peaks form. Fold in 1/2 teaspoon finely
shredded tangerine or orange peel. Makes 2 cups.

1/2 cup instant malted milk powder
1/4 cup milk
1 tsp vanilla
1 1/4 cups flour
1 tsp baking powder
1 cup malted milk balls, chopped coarsley
1/3 cup malted milk balls, chopped coarsley

In a large mixer bowl, beat margarine and sugar with an electric
mixer on medium speed untill light and fluffy. Add egg, malted milk
powder, milk and vanilla. Beat for 2 to 3 min more or until
thoroughly combined. In a small bowl stir together flour and baking
powder with mixer on low speed, gradually add flour mixture to the
sugar mixture, beating 2 to 3 min or until thoroughly combine. Fold
in the 1 cup milk balls. Spread the mixture into a greased 9x9x12"
baking pan. Bake in a 350 degree oven for 25 to 30 min or until a
toothpick inserted neat the center comes out clean. Cool bars on a
wire rack. Frost cooled bars with frosting and sprinkle with the
1/3 cup of milk balls. Makes 16 bars.
