Famous Recipes - Chinese Almond Cookies

These delicate cookies melt in your mouth and are the perfect
finish for a picnic.

Chinese Almond Cookies

4 cups (1 L) all-purpose flour
2 1/2 cups (625 ml) sugar
4 tsp (20 ml) baking powder
1 tsp (5 ml) baking soda
1 lb (450 g) vegetable shortening
2 eggs, beaten
4 tsp (20 ml) almond extract
Almond halves for garnish
Additional egg for glaze

In a large bowl, sift the flour, sugar, baking powder and baking
soda together. Gradually beat in the shortening. When the
shortening is well blended, add beaten eggs and almond extract.
If mixture is sticky, add one or two more tablespoons flour. When
mixture is well blended, remove from bowl and separate into four
portions. Shape each portion into a log about 1 inch (2.5 cm) in
diameter. Wrap in plastic wrap and refrigerate for one hour.
Preheat oven to 350F (180C). Lightly grease baking sheets. Remove
logs from refrigerator and cut each log into pieces 3/4 inch (2 cm)
thick. Use your hands to roll each slice into a ball. Place the balls
on cookie sheets and flatten slightly with your finger tips. Brush
gently with beaten egg and place half an almond in the center of
the cookie. Bake for 12-15 minutes (do not allow cookies to brown,
they should be almond colored). Remove from oven and let cookies
cool on cookie sheets for about two minutes, then remove to racks
to cool completely. (They tend to crumble if you remove immediately
to racks.) Store in tightly covered tins. Makes 7-8 dozen.

Ramen Noodle Salad

2 (3 oz) packages ramen noodles, chicken or beef flavor
8 oz (half a package) cabbage chopped for cole slaw
8 oz. pkg. julienned carrots
1 cup dry roasted peanuts
1 cup dry roasted sunflower seeds
3 Tblsp. white sugar
1/4 cup vegetable oil
1/3 cup cider vinegar
1 ramen noodle seasoning package
10 squirts soy sauce
sesame oil, to taste (I give it about 10 squirts) Cajun seasoning (I use
Slap Ya Mama, but Tony's is good too)

Break apart the ramen noodles and drop them into a large salad bowl. Add
cabbage, carrots, peanuts and sunflower seeds, in that order. In a
separate bowl, whisk together the sugar, oil, vinegar, seasoning packet,
soy sauce, sesame oil and Cajun seasoning. Pour over salad and toss to
coat. This salad gets better as it sits and the ramen noodles soften, so
refrigerate at least one hour.

This is another one I used to eat a lot as a Weight Watcher's version.
It's incredibly simple and tasty -- Lots of versions of it floating
around, and it's another one that goes fast in the summertime. If you're
not into the kick of Cajun seasoning, use garlic salt instead of garlic
powder. Dive in!

Summer Chicken Salad

2 cups cubed cooked chicken
1 cup small red grapes
1 (8 oz) can pineapple tidbits, drained
2 celery ribs, chopped
1/4 cup pecans
1/3 cup light mayo-type salad dressing
1/8 tsp. celery seed
garlic powder, to taste
Cajun seasoning (Slap Ya Mama), to taste

Combine chicken, grapes, pineapple, celery and pecans in a medium bowl
and set aside. In a small bowl, combine salad dressing, celery seed,
garlic powder and Cajun seasoning. Stir into chicken mixture. Cover and
refrigerate until ready to serve.
_______________________________________

"Fresh" Grilled Chicken

1 (1-1/2 to 3 lb) Chicken, cut up

For marinade:
Zest from 1 Tangerine
Zest from 1 Lime
3 Tbs Canola Oil
1 Garlic Clove, crushed
1 tsp Salt
1/2 tsp Black Pepper
1/8 tsp Cayenne, or to taste

Combine all ingredients for marinade in mixing bowl - transfer to large
zip lock bag. Add cleaned chicken parts and marinate, refrigerated, for
2 hours (or up to 12 hours - overnight would be too long).

Grill until chicken is done and juices run clear. Discard marinade.
_______________________________________

Grilled Meat Loaf

1/2 cup ketchup
1/2 cup quick-cooking oats
1/4 cup chopped green pepper
1 egg
1 teaspoon dried parsley flakes
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 pounds ground beef
Additional ketchup, optional

In a large bowl, combine the first nine ingredients. Crumble beef over
mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty
foil in center of grill. Place meat loaves on foil (do not seal foil).
Grill, covered, over indirect medium heat for 50 minutes or until meat
is no longer pink and a meat thermometer reads 160°. Brush tops with
additional ketchup if desired. Let stand for 10 minutes before slicing.
Yield: 2 loaves
(4 servings each).

Famous Recipes - Snicker Munch Bars

Snicker Munch Bars

2 cups salted dry roasted peanuts
1/2 cup butter (1 stick)
1/2 cup granulated sugar
1/4 cup light corn syrup

1. Spread peanuts out on a baking sheet and heat them up in your oven
set on 300 degrees. This will warm up the peanuts so that they don't
cool the candy too quickly when added later. There's no need to
preheat the oven.

2. Melt the butter in a medium saucepan over medium/low heat.

3. Add sugar and corn syrup and simmer, stirring occasionally. Put a
candy thermometer in the mixture and watch it closely.

4. When the mixture reaches 300 degrees add peanuts and stir well
until all of the peanuts are coated with candy. Pour the candy onto
the warm baking sheet and spread it flat. When the candy cools, break
it into chunks and store it in a covered container.

Makes the equivalent of 12 1.5-ounce candy bars.

RE: Famous Recipes - Mock Sangria

This is a recipe I used for a children's camp when we were studying different cultures.

Mock Sangria
1 lemon, thinly sliced
1 orange, thinly sliced
1 lime, thinly sliced

1 cup sugar
1 cup water

1 1/2 quarts red grape juice
2 liters Ginger Ale

Bring water and sugar to a boil. Cool to room temperature. Stir in fruits and refrigerate in a glass or plastic bowl, covered. Refrigerate over night. Remove fruits and set aside. Stir in grape juice and ginger ale. Then, add fruits. The students really liked this alot. It is good any time of year. If you want the white sangria, use a lemon, a peach, strawberries and any other fruit you desire with white grape juice instead of the red grape juice.

I use this recipe below for catering for weddings and proms when the self-serving fountain punch bowls are used. It does not have fuit sediment which can clog the fountain.

Mock Champagne
1 1/2 quarts white grape juice
2 litre raspberry or cranberry ginger ale
Chill, mix and serve.

Famous Recipes - Recipes - Grilled Potato Salad

Recipes - Grilled Potato Salad

White balsamic vinegar jazzes up potato salad

The Canadian Press

Published: Wednesday, June 21, 2006

Celebrate Canada Day with this Mediterranean-influenced summer
favourite in which crisp grilled golden potatoes, red peppers and
chopped sun-dried tomatoes absorb the sweet flavour of white
balsamic vinegar.

To celebrate the occasion, use a maple leaf cutter and cut out
leaves from the red peppers.

GRILLED POTATO SALAD

6 Yukon gold potatoes
2 Red peppers, quartered
2 tbsp Extra-virgin olive oil 30 mL
2 tbsp Chopped fresh basil 30 mL
1 tbsp Chopped fresh rosemary 15 mL
1/4 tsp Each salt and pepper 1 mL
WHITE BALSAMIC DRESSING:
1/4 cup Extra-virgin olive oil 50 mL
2 tbsp White balsamic vinegar 30 mL
2 tbsp Chopped sun-dried tomatoes in oil, drained 30 mL
1 Clove garlic, minced
1/3 cup Halved pitted kalamata olives 75 mL
2 tbsp Chopped fresh basil 30 mL
15 mL Capers 1 tbsp

Cut each potato into 8 wedges. Place in a large bowl with red
peppers. Add oil, basil, rosemary, salt and pepper and toss to coat
well.

Place potato wedges and peppers on greased grill over medium-high
heat and grill for about 20 minutes, turning once, or until golden
and tender. Thinly slice red peppers and return to bowl with grilled
potato wedges.

White Balsamic Dressing: Meanwhile, whisk together oil, vinegar,
tomatoes and garlic. Pour over grilled potatoes and peppers. Add
olives, basil and capers. Toss gently to combine. Serve warm or
cover and refrigerate for up to 2 days. Bring to room temperature
and toss well before serving.

Makes 6 to 8 servings.

TIP: You can substitute 1 jar (340 mL) roasted red peppers, drained
and sliced, for the 2 red peppers.

Famous Recipes - Spinach and Ricotta Tart

This savory pie is good warm, chilled, or at room temperature,
making it as versatile as it is delicious.

Spinach and Ricotta Tart

2 lbs (900 g) spinach, fresh or frozen
16 oz (450 g) ricotta cheese
1 small onion, diced
3 eggs
2 Tbs (30 ml) fresh basil leaves, chopped
Salt and freshly ground pepper to taste
A few gratings nutmeg
2 sheets phyllo dough* (or your favorite pastry dough recipe)
3 medium tomatoes, sliced
2 Tbs (30 ml) grated Parmesan cheese

* Available in most supermarket's frozen food sections.

If using fresh spinach, wash thoroughly and pack into a covered
saucepan with the water that clings to the leaves. Cook over high
heat about 1 minute, until the leaves are wilted. Drain in a colander
and squeeze to remove as much water as possible. If using frozen
spinach, thaw and squeeze to remove as much water as possible.
Chop the spinach finely and combine with the ricotta, onion, eggs,
basil, salt, pepper, and nutmeg in a large bowl, mixing to combine
ingredients. Place the two sheets of phyllo on a 9-inch (22 cm)
quiche pan or pie pan. Pour in the ricotta mixture. Trim the phyllo
so that 2 inches (5 cm) of dough hang over the edge of the pan,
and roll this up to resemble the crust of a pie. Arrange the tomato
slices on top of the ricotta mixture. Bake in the lower third of a
preheated 400F (200C) oven for 25 minutes. Sprinkle the Parmesan
cheese on top and bake an additional 15 minutes, until the tart is
firm in the center and a knife point inserted in the center come out
clean. Let rest 15 minutes before serving. Serve warm, chilled, or
at room temperature. Serves 6 to 8.

Famous Recipes - Cucumbers with Orange Sauce

Cucumbers with Orange Sauce

3 medium sized firm cucumbers
1/2 cup (125 ml) orange juice
1 Tbs (15 ml) grated orange zest
1 tsp (5 ml) cornstarch (cornflour)
Salt and freshly ground pepper to taste

Peel the cucumbers and slice them in half lengthwise. Scoop out
the seeds with a small spoon, and slice the cucumbers into 1/2-inch
(1 cm) pieces. Put in a pot with enough water to cover and bring to
a boil. Reduce the heat and simmer for 5 minutes, until tender but
firm. Meanwhile, mix the cornstarch with 2 or 3 tablespoons of the
orange juice, and put this mixture along with the rest of the orange
juice and the orange zest in a saucepan large enough to hold the
cooked cucumbers. Heat over moderate heat, stirring constantly,
until the sauce thickens and becomes translucent. Season with the
salt and pepper (hint: this sauce can take quite a bit of pepper and
is better if it is slightly spicy). Drain the cucumbers and add them
to the sauce, tossing to coat the cucumbers thoroughly. Serve
chilled or at room temperature. Serves 4 to 6.

Famous Recipes - Apple-Cabbage Ravioli with Bacon & Thyme Broth

* Apple-Cabbage Ravioli with Bacon & Thyme Broth **
Serves 6*
Homemade ravioli is a great family project - set up an assembly line with
one person rolling and measuring, another filling the ravioli, and another
(kids preferred) trimming with a speedy pastry wheel. Once made, ravioli can
be frozen until minutes before serving. NOTE: To make this recipe more
quickly, substitute wonton wrappers for ravioli dough and proceed from step
2.

Ingredients

Ravioli Dough:
2 cups all-purpose flour
1/2 cup cornstarch
1/2 teaspoon salt
1/4 cup water
2 large eggs
2 tablespoons vegetable oil

Apple-Cabbage Filling
2 tablespoons butter
1 cup finely chopped onion
2 cups finely chopped green cabbage
1/2 cup water
1/4 teaspoon salt
1 Golden Delicious Apple, peeled, cored, and grated
1/2 cup ricotta cheese
1 large egg white, beaten

Bacon and Thyme Broth
4 ounces thick-cut bacon coarsely chopped
2-1/2 cups water
1 large cube chicken bouillon
2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
1-1/2 tablespoons cornstarch dissolved in 1 tablespoon cold water

Method:

Prepare ravioli dough: In a large bowl combine flour, cornstarch and salt.
In measuring cup, beat together water, eggs and oil. Pout egg mixture into
flour mixture and beat until dough forms. This can also be done in a food
processor. Divide dough into quarters, wrap in plastic and let rest while
preparing filling.

To prepare apple-cabbage filling, heat butter in large skillet. Add onion
and sauté until golden. Add cabbage, water, salt and pepper to onion
mixture; cover and simmer 10 minutes, stirring occasionally, Add apple to
mixture, cover, and cook 7 to 8 minutes or until apple softens. Remove
filling mixture from heat, stir in ricotta and set aside until cool enough
to handle.

To make ravioli, line two baking sheets with clean cloths; dust cloths
generously with flour. On lightly floured surface, roll out one quarter
ravioli dough to a thin (1/16 inch) 9-inch square. Brush square with egg
white and cut square into thirds, creating nine 3-inch squares. Place 2
teaspoons apple-cabbage filling in center of each square. Fold top corner of
each square over filling to meet opposite bottom corner, creating a
triangle. Pinch seam sides of triangle to seal completely. With knife or
pastry wheel, trim edges slightly. Place ravioli on cloth-covered baking
sheet. Repeat rolling, cutting, and filling with remaining dough. Dust tops
of ravioli with flour, and refrigerate, uncovered, at least 1 hour. (To
freeze ravioli, arrange in a single layer on floured sheet and place in
freezer until frozen; store in sealed plastic bags for up to 3 weeks. If
cooking from frozen, increase cooking time 2 to 3 minutes.

Just before serving, prepare bacon and thyme broth; In deep skillet, cook
bacon until crisp. Remove bacon and set aside. Drain fat from skillet, add
water and bring to boil. Stir in bouillon cube in thyme, reduce heat and
simmer 5 minutes. Stirring, add cornstarch mixture to bouillon mixture.
Bring to boil and stir constantly until mixture thickens,. Remove from heat
and add reserved bacon; set broth aside while ravioli cooks. In large pot,
bring 3 quarts water to boiling; add ravioli an cook 5 to 7 minutes or until
tender. Drain, divide among serving bowls or deep plates and ladle bacon and
thyme broth over all. Garnish with fresh thyme sprigs, if desired, and
serve.

Hello group,
I am usually one of the quiet ones but this touched my heart. If
some one can let me know how much the cook books will be, I would
like to buy one also. I don't have a recipie for you, but I do have
a mother that died of cancer back in 1990. I am sorry to say it was a
long and painful death. I miss her so much and so does the rest of my
family. If enchanting_unicorns would like to get hold of me she can e-
mail me at cmom19615@aol.com. I think it would so nice to include
her story if it isnt to late.

Thank you

Famous Recipes - Creme Caramel

Creme Caramel with Fresh Raspberry Sauce

Ingredients
1/3 cup sugar
2 medium oranges, lemons, or limes
3 cups half-and-half or light cream
2 3-inch cinnamon sticks, broken up
3 eggs
3 egg yolks
2/3 cup sugar
2 teaspoons vanilla
Raspberry Sauce or Hot Chocolate Sauce (see recipes below)
Whipped Cream (optional)
Fresh raspberries (optional
Fresh mint sprigs (optional)

Directions
1. To caramelize sugar, in a heavy medium skillet, cook the 1/3 cup
sugar over medium-high heat till the sugar begins to melt, shaking
skillet occasionally. Do not stir. Once the sugar starts to melt, reduce
heat to low and cook about 5 minutes more or till all of the sugar melts
and is golden brown, stirring as needed with a wooden spoon.

2. Remove skillet from heat and immediately pour caramelized sugar into
a 9-inch flan pan or a 9x1 1/2-inch round baking pan (or divide
caramelized sugar among six 6-ounce custard cups). Working quickly,
rotate pan (or cups) so sugar coats the bottom as evenly as possible.
Cool.

3. Meanwhile, prepare the custard. Remove the peel from the oranges,
lemons, or limes with a vegetable peeler.

4. In a medium saucepan, heat the half-and-half, citrus peel, and
cinnamon sticks over medium-low heat for 15 minutes or just till tiny
bubbles form around the edge. Meanwhile, whisk the eggs and egg yolks in
a medium bowl until mixed. Gradually whisk in the 2/3 cup sugar; set
aside.

5. Strain half-and-half mixture; discard citrus strips and cinnamon
pieces. Slowly stir the hot half-and-half into the egg mixture. Stir in
the vanilla.

6. Place prepared flan pan (or custard cups) in a shallow roasting pan
on an oven rack. Pour egg mixture into the prepared pan (or custard
cups). Pour hot tap water into the roasting pan baking pan around the
flan pan (or custard cups) to a depth of about 1/2 inch. Bake in 325
degree F oven about 45 minutes for 9-inch pan (35 minutes for custard
cups) or till knife inserted near center comes out clean. Cool 1 hour;
cover and chill 2 to 24 hours.

7. To serve, unmold flan by loosening edges with a knife. Slip the end
of knife down sides of pan to let in air. Carefully invert a serving
platter over pan (or a dessert plate over custard cup); turn dishes over
together to release custard. Spoon any caramelized sugar that remains in
pan on top. Serve with Raspberry Sauce or Hot Chocolate Sauce. If you
like, garnish with whipped cream, fresh fruit and edible flowers. Makes
6 servings.

Raspberry Sauce: In a food processor bowl or blender container, combine
3 cups red raspberries or one 12-ounce package frozen and thawed red
raspberries or 3 cups strawberries or one 12-ounce package frozen and
thawed unsweetened strawberries and 1 tablespoon sugar. Cover; process
or blend till smooth. Strain sauce and discard seeds. Cover and chill
until serving time or up to 5 days. Makes about 1 1/2 cups.

Hot Chocolate Sauce: In a heavy small saucepan melt 3/4 cup semisweet
chocolate pieces and 1/4 cup butter over low heat, stirring constantly.
Add 2/3 cup sugar; gradually stir in one 5-ounce can (2/3 cup)
evaporated milk. Bring mixture to boiling; reduce heat. Boil gently over
low heat for 8 minutes, stirring frequently. Remove pan from heat. Cool
slightly. Makes about 1 1/2 cups sauce.

cooled, peel, slit the chili lengtwise and remove the seeds and veins,
leaving the top and core intact. Set aside.

Simmer the tomatoes in 1 1/2 C. water until very soft, then transfer
tomatoes to a blender and blend until smooth adding salt to taste. Set
aside.

Stuff peppers with cheese, sprinkle them with salt, seal the slit with a
wooden toothpick (plastic ones will melt during frying) and dredge them in
flour.

Beat the egg whites until stiff peaks form, then add the salt and the egg
yolks and beat for two minutes more. Heat the oil in a frying pan.

Dip the peppers in the batter making sure they are covered well, and fry
them in the oil until golden, then drain them on paper towels.

Serve them drenched in the tomato sauce with refried beans on the side.

Famous Recipes - Squash Soup

Squash Soup

Ingredients:
1 medium sized butternut squash (peeled and cubed about 2.5 cups)
1 medium onion, chopped
4 cups of chicken bouillon
1 tablespoon of fresh sage chopped finely
1 teaspoon of thyme
2 tablespoons of butter
Blue cheese (optional)
Toasted pine nuts (optional)

Here's a wonderful recipe for squash soup! First, sauté the onions in the
butter for about 8 - 10 minutes on medium high until the onions are just
about soft. Then add the cubed squash and sauté the mixture for about 10
minutes, just until the squash starts turning color and softens up. Now add
the seasonings and sauté for 1 more minute. And finally, add the chicken
broth, bring the mixture to a boil, and then simmer for 20 minutes. After
the soup is cooked, place it in a blender and liquefy.

Then simply ladle the soup into a bowl; add some crumbled blue cheese and
toasted pine nuts to the top, and there you have it! It's a tasty soup to
help warm up those cold days.

Famous Recipes - Chicken Saltimbocca Recipe

Chicken Saltimbocca Recipe

Giada De Laurentiis brings Everyday Italian to Rebecca's Garden, with an
easy and delicious recipe for Chicken Saltimbocca.

*Ingredients*
6 (3-ounce) chicken cutlets, pounded to evenly flatten
Salt and freshly ground black pepper
6 paper-thin slices prosciutto
1 (10-ounce) box frozen chopped spinach, thawed
3 tablespoons olive oil
1/4 cup grated Parmesan
1 (14-ounce) can low-salt chicken broth
2 tablespoons fresh lemon juice

*Instructions*

Place the chicken cutlets flat on the work surface. Sprinkle the chicken
with salt and pepper. Lay 1 slice of prosciutto atop each chicken cutlet.

Squeeze the frozen spinach to remove the excess water. Season the spinach
with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of
oil to coat.

Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle
the Parmesan evenly over each.

Beginning at the short tapered end, roll up each chicken cutlet as for a
jellyroll. Secure with a toothpick.

Heat the remaining 2 tablespoons of oil in a heavy large skillet over high
heat.

Add the chicken and cook just until golden brown, about 2 minutes per side.

Add the chicken broth and lemon juice, and scrape the browned bits off the
bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce
the heat to medium.

Cover and simmer until the chicken is just cooked through, about 8 to 10
minutes.

Transfer the chicken to a platter. Simmer the cooking liquid over high heat
until it is reduced to about 2/3 cup, about 5 minutes.

Season the cooking liquid with salt and pepper, to taste. Remove toothpicks
from the chicken.

Drizzle the reduced cooking liquid over the chicken and serve immediately.

Famous Recipes - Butterflied Trout in Lemon Caper Butter-WolfGang Puck

** Butterflied Trout in Lemon Caper Butter
Serves 4

4 whole trout , cleaned
Salt and freshly ground black pepper
Flour, for dredging
Olive oil, for sautéing
2 tablespoons butter, plus 1 tablespoon
2 lemons, supremed and cut into 1/2-inch pieces
1 tablespoon capers
Toasted Croutons, recipe follows
1/4 cup dry white wine
1 teaspoon lemon juice
1/4 cup chopped parsley leaves

I like to use this recipe with other types of fish; the butterflying will
work best with a smaller fish, like a Pacific Red Snapper or an Arctic Char.
Avoid using any bottom-fish, like flounder or sole; these are good for
filleting, but not to butterfly.

1) Lay out the trout so the skin side is down. Open the flesh like a book.
With a sharp knife, carefully cut out the backbone, making sure to keep the
fillets attached at the head and the tail. Season both sides of the trout
with salt and pepper.

2) Lightly dredge both sides of the trout with flour, shaking off any
excess. Heat a large sauté pan over high heat. When the pan is hot, add
enough olive oil to lightly coat the bottom of the pan. Heat the oil until
it shimmers when swirled. Carefully add the trout, flesh-side down, starting
at the tail and lying away from you towards the head. You may need to cook
the trout in batches. Cook until golden brown on both sides, about 2 to 3
minutes per side. Remove to a platter and keep warm.

3) Once the trout is all cooked, return the pan to medium-high heat and
remove all but 1 tablespoon of the oil. Add 2 tablespoons of the butter and
cook just until it begins to brown and smell nutty, about 3 minutes. Add the
capers, lemons, croutons, white wine, and lemon juice and cook, stirring,
for 2 minutes. Add the remaining tablespoon of butter and remove from the
heat. Stir in the parsley and pour over the trout.

Toasted Croutons:

3 tablespoons olive oil

4 (1/2-inch thick) slices white bread, crusts removed and cut into 1/4-inch
cubes

Salt and freshly ground black pepper

1) Heat a large sauté pan over high heat. Add the olive oil and heat. When
the oil is hot, add the bread cubes and cook, stirring, until toasted and
golden brown, about 10 minutes. Season with salt and pepper. Remove from the
heat and cool.
