I have been enjoying going to the Columbia since I was about 10 years old, when I would go to visit our family in Florida. This is a great salad, and I am happy to have the recipe. It brings back fond memories. I hope you will post more recipes from the Columbia as you get them. Especially their Black Bean Soup!

*Directions:* 1. Pour the chicken stock into a pot and bring to a gently boil over medium heat. Meanwhile heat the margarine in a skillet. Add the garlic and onion, and stir-fry until aromatic. Reduce the heat to medium-low, add the salt, ground white pepper, ground nutmeg, garlic and onion's stir-fry, crab meat, asparagus, green peas and cilantro, bring the soup to boil. 3. Combine the corn starch and water in a small bowl and mix thoroughly to make a slurry. Pour into the boiling soup while stirring and cook for five minutes.

She was inspired by entrée that she has had many times at the restaurant Saucebox, in Portland, Oregon. She uses light soy sauce and golden brown sugar, both those ingredients mixed together can be subtituted for Indonesian sweet soy sauce aka *kecap manis*. You can buy it at an asian grocery.

*Ingredients:* 5 tablespoons unsalted butter (she uses 6 tablespoons) ½ teaspoon red pepper falkes (you can put more if you like spicy taste) 2 cloves garlic (she uses 1 clove garlic), minced ¼ cup packed golden brown sugar 3 tablespoons fresh lime juice 1/ cup light soy sauce 1 teaspoons cornstarch dissolved in 1 teaspoon water 300 grams salmon fillets sea salt ground pepper

*Directions:* 1. Preheat 400ºF. In a small saucepan, melt 3 tablespoons of the butter over medium-high heat. Add the red pepper flakes and garlic and stir until fragrant, about 1 minute. Add the sugar, soy sauce and lime juice, and bring to boil. Simmer, stirring frequently, until the sugar is dissolved and the mixture reduced slightly, about 3 minutes. Add the cornstarch mixture and boil until thick, about 1 minute. Set aside.

2. Have ready a large sauté pan and rimmed baking sheet. Sprinkle the salmon lightly with salt and pepper. Melt 2 tablespoons of the remaining butter over high heat. Swirl to coat pan and add the salmon. Sear the salmon until golden on one side, about 2 minutes. Turn and sear the other side, about 2 minutes longer. Transfer the salmon to the baking sheet and spoon the sauce over each fillet. Place in the oven and roast until the salmon is almost opaque throughout, about 5 minutes. Four Servings Prep Time: 25 minutes Columbia Restaurant in the Tampa area's historic Ybor City no doubt qualifies as mass production: 1,700 seats in 15 dining rooms that together span a full city block, making it the biggest Spanish restaurant in the world--including, you know, Spain. At least 1,000 people show up daily, and on weekends the place is bursting. The "1905" salad is a citywide obsession.

Ingredients 1/2 head of iceberg lettuce, torn into bite-size pieces 2 ripe tomatoes, each cut into 8 wedges 1/2 cup thin strips of Swiss cheese (2 ounces) 1/2 cup thin strips of ham (2 ounces) 1/4 cup pitted green Spanish olives 4 garlic cloves, finely chopped 1 teaspoon dried oregano 1 teaspoon Worcestershire sauce 1/2 cup extra-virgin olive oil, preferably Spanish 2 tablespoons white wine vinegar 2 teaspoons fresh lemon juice Salt and freshly ground pepper 2 teaspoons grated pecorino Romano cheese

1. In a large bowl, toss together the lettuce, tomatoes, Swiss cheese, ham and olives. 2. In a small bowl, whisk together the garlic, oregano and Worcestershire sauce. Gradually whisk in the olive oil, continually beating to form an emulsion. Stir in the vinegar and lemon juice and season with salt and pepper. 3. Pour the dressing over the salad and toss well. Add the pecorino, toss and serve.

Bake 15 to 20 minutes or until golden. Cool 5 minutes. Gently press center of each puff with tip of spoon to make slight indentation. Sprinkle with cheese and nuts. Bake until cheese is melted. 2 egg whites 1/4 teaspoon cream of tartar 1/2 cup sugar 1 cup chopped pecans -- toasted 1 teaspoon vanilla 1 tablespoon powdered sugar 1/2 cup butter 1 tablespoon cocoa 3 tablespoons half and half 2 1/4 cups sifted powdered sugar

Preheat oven to 350ºF. Beat egg white and cream of tartar at high speed until foamy. Gradually add 1/2 cup sugar, one tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Stir in pecans and vanilla. Drop mixture by teaspoonfuls onto cookie sheets lined with foil. Dip finger in 1 tablespoon powdered sugar and make an indention in center of each cookie. Place in oven and immediately turn oven off. Do not open door for at least 8 hours. Remove from oven and carefully peel cookies from foil. Combine butter, cocoa and half and half in a small saucepan. Bring to a boil over medium heat. Remove from heat and let cool to room temperature. Gradually add 2 1/4 cups powdered sugar, beating well with mixer. Just before serving pipe cocoa mixture (using a pastry bag lined with a star tip) into indention of each cookie.

Shortbread: 100 Gram Butter (3 1/2 oz) 3 Tbsp. Sugar 60 Gram Cornflour, sifted (2 oz) 90 Gram Plain flour, sifted (3 oz) Caramel Filling: 125 Gram Butter (4 1/2 oz) 90 Gram Brown sugar (3 oz) 2 Tbsp. Honey 400 Gram can sweetened condensed milk (14 oz) 1 tsp. Vanilla essence Chocolate topping: 200 Gram Plain chocolate (7 oz)

Preheat oven to 180 C/350 F/Gas 4. To make the base, place the butter and sugar in a bowl and beat until light and fluffy. Mix in the cornflour and plain flour, turn onto a lightly floured surface and knead briefly. Press into a greased and lined 18 x28 cm (7 x 11 inch) shallow cake tin and bake for 25 minutes or until firm. To make the filling, place the butter, brown sugar and honey in a saucepan and cook over a medium heat, stirring constantly until the sugar melts and the ingredients are combined. Bring to the boil and simmer for 7 minutes. Beat in the sweetened condensed milk and vanilla essence. Pour the filling over the base and bake for 20 minutes longer. Set aside to cool completely. Spread melted chocolate over the filling, set aside until firm, then cut into squares.

Caramel Shortbread Squares

2/3 cup butter, softened 1/4 cup white sugar 1 1/4 cups all-purpose flour 1/2 cup butter 1/2 cup packed light brown sugar 2 tablespoons light corn syrup 1/2 cup sweetened condensed milk 1 1/4 cups milk chocolate chips

Preheat oven to 350 F (175 C). In a medium bowl, mix together 2/3 cup butter, 1/4 cup white sugar, and 1 1/4 cup flour until evenly crumbly. Press into 9" square baking pan. Bake for 20 minutes. In a 2 quart saucepan, combine 1/2 cup butter, brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil. Continue to boil for 5 minutes. Remove from heat and beat vigorously with a wooden spoon for about 3 minutes. Pour over baked crust (warm or cool). Cool until it begins to firm. Melt chocolate and pour over caramel layer. Cover the layer completely. Chill. Cut into squares (about 48 - small because it is rich).

Chocolate-Caramel Squares

1 pk (14-oz) caramels 2/3 cup evaporated milk; divided 1 pk german chocolate cake mix 3/4 cup butter or margarine; softened 1 cup chopped nuts 1 pk (6-oz) semi-sweet chocolate morsels

Combine caramels and 1/3 cup evaporated milk in top of double boiler; cook, stirring constantly, until caramels are completely melted; remove. Combine cake mix, 1/3 cup evaporated milk and butter; mix with electric mixer until dough holds together. Stir in nuts. Press half of mixture into a greased 13x9x2-inch pan. Bake at 350 F for 6 minutes. Sprinkle chocolate morsels over crust. Pour caramel mix over chocolate, spreading evenly. Crumble remaining cake mixture over caramel mixture. Return to oven and bake 15-18 minutes.

Spray baking dish with cooking spray then add box of croutons. Sprinkle sausage, mushrooms and cheese over croutons. Mix eggs, milk, soup (or gravy) and dry mustard. Pour over sausage mix in pan. Refrigerate overnight. Bake at 375 degrees for 1 hour or until eggs are firm and set.

Snap the asparagus to length and rinse well. Boil a pot of water. When it reaches a rolling boil, put the asparagus in. Watch the pot closely, and as soon as the water starts to boil again remove from heat and drain immediately. Place in a large bowl, sprinkle the garlic over it, and pour about 1/2 cup of olive oil all over asparagus, followed by about 1/4 to 1/2 cup wine vinegar and about 1/2 cup soy sauce and 1/4 cup teriyaki sauce. Mix well and marinate for 15-20 minutes. Excellent hot like this, or chill overnight and use as a cold salad.

3 tablespoons butter or margarine, softened 3/4 cup sugar 3 eggs 1 cup applesauce 1 teaspoon vanilla extract 4-1/2 cups all-purpose flour 3-1/2 teaspoons baking powder 1 teaspoon salt 1/2 to 3/4 teaspoon ground cinnamon 1/4 to 1/2 teaspoon ground nutmeg 1/4 cup milk Oil for deep-fat frying Additional sugar

In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine flour, baking powder, salt, cinnamon and nutmeg; add to the creamed mixture alternately with milk (the batter will be thick). In an electric skillet or deep-fat fryer, heat oil to 375°. Drop teaspoonfuls of batter a few at a time into hot oil. Turn with a slotted spoon and fry until golden, about 1 minute on each side. Drain on paper towels; roll in sugar while warm. Yield: about 5 dozen.

Heat oil in Dutch oven and brown pork on all sides. Pour off the fat. add cider, onions, garlic, salt, pepper and bay leaves. Bring to boil, then cover and reduce heat. Cook for 1 1/2 hours, until meat is tender. Add carrots and potatoes and cook 15 minutes more. Add cabbage, mushrooms, green pepper and apples. cook until all vegetables are tender 15-2- minutes. Remove meat and vegetables to a warm dish and keep warm while you make the gravy. Discard the bay leaves. Skim off the fat from the liquid. Reserve 1 3/4 cups of liquid. (add water if need to make up difference). Blend cold water with flour and stir into hot reserved liquid. Cook until thickened. Stir in Kitchen Bouquet. Adjust seasoning to taste.

4-6 halibut steaks, about 6 oz (170 g) each Salt and freshly ground pepper to taste 3 Tbs (45 ml) lemon juice 1 cup (250 ml) finely chopped walnuts 1 cup (250 ml) grated cheddar cheese 1/2 cup (125 ml) dry bread crumbs

Season the halibut steaks with salt and pepper and place in a greased baking dish. Sprinkle with lemon juice. Combine the walnuts, cheddar cheese, and bread crumbs and sprinkle the mixture over the fish. Bake in a preheated 400F (200C) oven until the fish is firm and opaque and the topping is golden brown, 10 to 15 minutes. Serves 4 to 6.

Directions 1. Preheat oven to 400 degree F. In a small bowl, stir together sour cream, dessert topping, vanilla, and 1/8 teaspoon cinnamon. Cover and chill while preparing tortillas.

2. Lightly brush both sides of each tortilla with melted butter. In a small bowl, stir together sugar and 1/8 teaspoon cinnamon; sprinkle over tortillas. Cut each tortilla into 8 wedges; arrange on two ungreased baking sheets. Bake for 8 to 10 minutes or until crisp. Cool completely. 3. To serve, divide tortilla wedges among six dessert plates. Top with raspberries and/or blackberries and sour cream mixture. Sprinkle with almonds and grated chocolate. Makes 6 servings.

Directions 1. Potato Layer: In large pot of boiling water, cook potatoes until just tender, about 5 minutes. Drain well in a colander; rinse under cold running water to stop cooking. Transfer to paper toweling and gently blot dry.

2. Heat oven to 400 degrees F. Lightly coat inside of 8 x 8 x 2-inch baking dish with olive oil. Layer sliced potatoes in dish, sprinkling layers with garlic, scallions, salt and pepper.

3. Fish Layer: Arrange fish on top of potatoes. Place tomato wedges around outside edge of baking dish. Sprinkle fish and potatoes with rosemary, thyme, parsley, salt and pepper. Sprinkle fish and tomatoes lightly with olive oil. Then squeeze lemon halves over dish.

4. Bake in 400 degree F oven until fish begins to flake and potatoes are tender, 15 to 25 minutes. Sprinkle with chopped herbs for garnish. Makes 4 servings.

Add buttermilk and egg and whisk until blended. Stir in melted butter. Pour onto caramel and apples in the pan covering evenly. Bake for 25 minutes or until golden brown on edge. Remove from oven and let sit for 10 minutes. Invert onto aserving dish. Serves 4.

2 C. flour 5 TBS.Sugar 1 TBS baking powder 1/4 tsp salt 1 TBS lemon zest 6 TBS cold butter , cut up 1 egg, beaten 1/2 c. milk 1 TBS vanilla ext. 1 egg beaten, brushed on top of scones

Preheat oven to 400, In med. bowl, combine flour, baking powder,salt and lemon zest.Cut in butter pieces until mixture is crumbly.

In a seperate bowl, combine egg, milk, and vanilla. Add to dry ingrediants and mix just until the dough forms a ball.

Turn the dough onto a floured surface and knead only a few times. Roll out to 1/2 inch thickness.

Place on ungreased cookie sheet.

Scones can be cut out in any shape you would like...use a biscuit cutter, heart cookie cutter...etc...I like to keep mine in a large circle and score the dough into 8 wedges...do not cut the whole way through. Coat top of scone with last beaten egg and some extra sugar if you would like. Bake 10-15 minutes or until light golden brown.

Here's a recipe for a fool-proof egg bread (challah, easter bread, adaptable to many other ethnic celebratory breads) and for forming it into a very attractive edible centerpiece for bringing to a family holiday dinner.

Challah

2 cups hot water 3/4 cup sugar 2 packages yeast

In a very large bowl, mix these ingredients. Let sit for a few minutes to proof the yeast, i.e. until the yeast activates and forms a layer of bubbles over the mixture. Add the rest of the ingredients in the following order. (Note: its ok to change the order, but sometimes the kneading may be more difficult to do.)

8 cups flour (see note) 1/2-1 teaspoonful salt 3/4 cup oil 3 + 1 large eggs

Break the 4th egg into a small bowl and scramble it. Pour most of it into the dough, reserving a small amount for the egg wash glaze later. Add a few drops of water to the egg remaining in the bowl for the glaze so it doesn't dry up.

(Note: Ive use 1/2 bread flour at times, or 1/2 whole wheat for 1/2 the amount of regular flour usually used.)

After bringing the ingredients together, turn the very large, heavy mass of dough onto a large flat surface, coated with some flour to prevent sticking. Start to knead the mixture together. Depending on the size of the eggs and humidity, you may need to add more flour or water for the correct consistency. Continue to knead until the batter changes consistency and becomes smooth and springy and uniform. Add flour or water if necessary so that the final mass is neither tacky nor dry to the touch. It should not stick to the counter or your hands (or only very slightly). It generally takes around 15-20 minutes to knead properly.

Put a bit of oil into the bowl and drop the dough onto it so it coats the bottom. Flip the dough so the coated side is up. (This prevents the top from drying out). Put in a warm area to rise, generally around 45min 1.5 hour.

Turn the dough out onto the workspace, again adding a very small amount of flour to the area if needed to prevent sticking. Knead a few times it until its deflated and smooth. Prepare a very large flat pan (pizza pan) to hold the shaped bread for baking by coating with a light spray of oil.

The following are instructions for the triple layer braided circular bread.

Separate 1/3 of the batter and set that aside. Divide the remaining dough (the 2/3 total) into 3 equal pieces. Knead each individually until most of the air pockets are gone, and roll each out into a rope/snake shape. Place the 3 ropes parallel to each other. Starting from the middle, braid them. Repeat until the end of the half and gently press the ends together. Flip the half-braid over, and repeat until the entire piece is braided. (note: this forms a more even braid than starting at one end and working towards the other) Form it into a large circle on the pan, tucking the end under the middle. Set aside.

Repeat. That is, taking the 1/3 originally set aside, break off 1/3 of that and set that aside. Divide the 2/3 into thirds and knead each and roll into ropes. Braid. Form into a circle and place on top of the bottom layer on the pan, centering it.

Take the last piece. If you want to be fancy, braid it also. But the easiest thing to do now is to form a chunky rope and tie it into a knot and tuck the ends under for a bit more shape. Place it on the other two layers. Make sure to center everything well so it doesnt slide down.

Put in a warm place to let rise until large (supposedly double, but whatever looks good to you), about 15-30 min. Take it out and GENTLY brush the scrambled egg glaze onto all parts, trying not to let any drip onto the pan.

Sprinkle with sesame and onion seeds if you have them.

Bake at 300-325 degrees (depending on your oven) for 50-60 minutes.

Its done if it sounds hollow. It should release easily from a flat pan when done.

Makes one massive Challah that serves a very large crowd. Instead of this challah, you can decorate the dough with hard-boiled, colored Easter eggs, raisins, and a cinnamon-sugar coating between the ropes when braiding or forming monkey bread pieces. You can pull off individual pieces for rolls, roll large spheres for monkey bread, or shape it into loaves. If you bake in smaller pieces, reduce the cooking time to perhaps 45 min. Ive shaped and cooked it in bowls and even a woven basket but they need to be well coated with oil and possibly corn floured.

1 10 oz pkg. frozen chopped spinach (thawed) 1 oz envelope fajita seasoning mix 1/2 cup chicken broth (or water) 3 6 oz pkgs. refrigerated South west flavored chicken breast strips, chopped 1 15 oz can black beans, rinsed and drained 1 11 oz yellow corn with red and green pepper, drained 2 cup shredded Mont. Jack cheese 6 10 inch flour tortillas salsa

Combine undrained spinach and fajita seasoning in nonstick skillet. Add broth. Cook over medium heat for 5 minutes. Stir in chicken and next 3 ingredients. Simmer until cheese melts. Spread 1 cup chicken mixture on 1 side of tortilla leaving 1/2 inch border around edges. Roll up tortillas and wrap in plastic wrap. Chill 30 minutes. Unwrap rollups and +cut into slices. Serve with salsa.

Ingredients:

* 3/4 c Long-grain rice * 1 Egg white * 1/4 c Fresh parsley, chopped * 3 tb Butter * 1 Garlic clove, minced * 2 c Fresh mushrooms, sliced * 1 c Celery, sliced * 1/2 c Green onion, chopped * 1/2 ts Dried dillweed * 1/2 ts Salt * 1/2 ts Pepper * 1 lb Raw unpeeled shrimp * 3 tb All-purpose flour * 1 1/2 c Milk * 3/4 c Gruyre, shredded * 2 ts Lemon rind, grated * 1/4 c Fresh bread crumbs

Instructions: This can be made with any combination of seafood, such as scallops, crab or lobster. Serve with green beans and endive salad.

In saucepan, bring 1-1/2 cups salted water to boil. Stir in rice; cover and simmer over low heat for 15-20 minutes or until tender and water is absorbed. Remove from heat; stir in egg white and 1 tb of the parsley. Press mixture into bottom of greased 8-inch square baking dish or other shallow heat proof casserole with same volume; set aside.

Meanwhile, in nonstick skillet, melt 1 tb of the butter over medium-high heat; cook garlic, mushrooms and celery, stirring, for about 5 minutes or just until vegetables start to brown. Stir in onions, dill and 1/4 ts each of the salt and pepper; cook over high heat for about 2 minutes or until lightly browned. transfer to large bowl.

Whip out skillet; pour in 2 cups water and bring to simmer. Cook shrimp for about 1 minute or just until pink. Reserve 1 cup of liquid, rinse shrimp under cold running water. Shell and devein shrimp; arrange over rice in baking dish.

In heavy saucepan, melt remaining butter over medium heat; stir in flour. Cook, stirring, for about 2 minutes, without browning; gradually whisk in reserved liquid and milk. Cook, stirring, for about 20 minutes or until thickened. Remove from heat; stir in 1/2 cup of the cheese, lemon rind and remaining salt and pepper until cheese is melted. Stir into vegetable mixture along with remaining parsley; pour over shrimp in baking dish.

[Can be prepared to this point, covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes before baking.]

In small bowl, stir together remaining cheese and bread crumbs. Sprinkle evenly over casserole. Bake in 325F 160C oven for 40-50 minutes or until heated through. Broil for about 2 minutes or until top is golden. Let stand for 15 minutes.

Asparagus with Hazelnut Sauce

6 Tbs (90 ml) butter 1/4 cup (60 ml) finely chopped hazelnuts (filberts) 1 tsp (5 ml) tarragon or red wine vinegar Salt and freshly ground pepper to taste 2 lbs (900 g) asparagus, trimmed and steamed until tender

Heat the butter in a small saucepan over moderate heat and saute the chopped hazelnuts until lightly browned and aromatic, about 5 minutes. Remove from the heat and stir in the vinegar, salt, and pepper. Serve over cooked asparagus. Serves 4 to 6.
