English Pea Salad

1 can English peas 1 medium onion, chopped and Bell pepper 2 heaping Tbsp mayonnaise 2 boiled eggs, diced 1 small jar pimiento, drained 2 Tbsp sweet pickle relish 1 cup shredded cheddar cheese (I like a Colby/cheddar mix)

Mix all ingredients and chill. Sometimes I crumble crisp fried bacon over the top just before serving. ( You can adjust, add, or delete these ingredients to your liking) Hope you like this. Prissy
