Zucchini Quiche

4 cups zucchini, sliced 1/8" thick 2 cup chopped onions 1 egg 8 oz shredded mozzarella cheese 4 tbs chopped parsley 1/2 tsp basil 1/4 tsp oregano 1/2 tsp salt 1/4 to 1/2 tsp salt 1/2 lb butter 1 tsp Dijon mustard

Place 1 crust in 8" glass pie dish. Spread with mustard. In deep skillet, melt butter, add zucchini, onions, spices and sautee for 10min. Combine egg and cheese in a big bowl, stir well. Put into pie crust. Bake at 425 degrees for 10min then 350 degrees for 10-20mins until knife inserted into center comes out clean.
