Famous Recipes - Some nice desserts to try for the long weekend

Twinkie Jell-O Dessert

10 Twinkies 2 (3 oz.) packages orange Jell-O (I used sugar free) 1 c. boiling water 1 (20 oz.) can crushed pineapple in juice, drained 1 c. lemon-lime soda 1 quart vanilla ice cream, at room temperature, (I used sugar free)

Arrange Twinkies in the bottom of a 9-by-13-inch baking dish. In a bowl, mix together the Jell-O and boiling water, stirring until dissolved. Stir in the pineapple and soda. Blend in the ice cream and beat until smooth with a whisk or an electric mixer on low speed. Pour the Jell-O mixture over the Twinkeis and refrigerate for 2 to 3 hours, until set.

To serve, cut into squares and serve chilled Serves 12. _______________________________________

PB & B Bread

1/2 cup butter, softened 1 cup white sugar 2 eggs (beaten) 1/2 cup peanut butter (any kind) 2 bananas, mashed 2 cups all-purpose flour 1 teaspoon baking soda

1. Preheat oven to 325 F. Lightly grease a 9 x 5 loaf pan. 2. In a large bowl, cream together butter and sugar until light and fluffy. 3. Add eggs to creamed mixture and beat well. 4. In a small bowl, sift together the flour and baking soda. 5. Stir in peanut butter, bananas, flour and baking soda until well blended. 6. Pour into loaf pan and smooth out. 7. Bake at 325 F for 70 minutes or until a toothpick or wooden skewer inserted into the center of the loaf comes out clean. 8. Let cool a few minutes, and then turn out onto a wire rack to cool completely.(I elevate my wire racks to 6 inches off the surface and put them on paper bags to absorb the moisture from the steam of the bread. This keeps the bread from getting soggy on the bottom.

S'more Berry Decadence Pie Makes: 10 servings

9 Honey Grahams, finely crushed (about 1-1/2 cups crumbs) 1/4 cup sugar 1/3 cup margarine or butter, melted 3/4 cup Miniature Marshmallows 1-1/4 cups Hot Fudge Microwavable Sundae Topping, divided 1 pt. (2 cups) vanilla ice cream, slightly softened 1 pt. (2 cups) fresh berries, sliced if large

PREHEAT oven to 375F. Mix graham crumbs, sugar and margarine. Press firmly onto bottom and up side of 9-inch pie plate. Bake 5 to 6 minutes or until lightly browned. SPRINKLE crust evenly with marshmallows; place on top oven rack. Bake an additional 3 to 4 minutes or until marshmallows are lightly browned. Cool completely. Spread 3/4 cup of the fudge topping over marshmallows; cover with ice cream. Freeze 2 hours or until firm. REMOVE from freezer about 5 minutes before serving to soften slightly. Arrange berries decoratively over pie, leaving 1/2-inch border of ice cream around edge. Cut pie into 10 slices. Warm remaining 3/4 cup fudge topping. Spoon over pie just before serving. Store leftover pie in freezer.

KITCHENS TIPS Note Baked marshmallow-topped crust can be refrigerated for 15 minutes for faster cooling.

Snickerdoodle Cake & Creamy Cinnamon Frosting

1 Pkg White Cake Mix 1 Cup Milk 4 oz (1 Stick) Butter, melted 3 Large Eggs 1 tsp Vanilla Extract 2 tsp Ground Cinnamon

Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans. In large mixing bowl, combine cake mix, milk, melted butter, eggs, vanilla, and cinnamon; mix for 3 minutes scraping sides as needed. Divide batter between pans.

Placing the two cake-pans in the oven side by side, bake until they are golden brown, about 27 - 29 minutes.

Remove from oven and cool for 10 minutes before inverting them onto another rack and allow them to cool completely.

Meanwhile, prepare Cinnamon Buttercream Frosting. Frost. Place in refrigerator until the frosting sets, 20 min. Keep refrigerated.

Creamy Cinnamon Frosting

4 Oz (1 Stick) Butter, at room temperature 3-3/4 Cup Confectioners' Sugar 3 Tbs Milk (or more if needed) 1 tsp Vanilla Extract 1 tsp Ground Cinnamon

In large mixing bowl, blend butter with an electric mixer on low until fluffy, about 30 seconds. Add sugar, milk and vanilla; blend on low until sugar is incorporated, about 1 minute. Add cinnamon, increase speed to medium and beat until light and fluffy, about 1 minute more. Blend in up to 1 tablespoon more of the milk if the frosting seems too stiff to spread easily. _______________________________________
