Famous Recipes - Colonial Bean Soup

Colonial Bean Soup

2 slices bacon, crumbled 1 1/2 cups chopped celery 1 cup minced celery 1 garlic clove, minced 2 cans(10 oz) low sodium chicken broth 1 can(15 4/5oz) great northern beans, drained and rinsed 1 can(14 1/2 oz) diced tomatoes, drained 1/4 tsp black pepper 1/8 tsp ground cayenne pepper 2 tbs smooth peanut butter

Cook bacon in a large heavy saucepan until crisp enough to crumble, reserving rendered fat. Add onion, celery and garlic and saute of medium heat until onions have softened without browning. Add chicken broth, beans, tomatoes, black pepper and cayenne pepper. Simmer for 20min. Just before serving, mix peanut butter into soup until melted. Garnish with crumbled bacon and serve warm.
