Brigitte's quick tart with smoked ham, onions and crème fraiche

½ kilo (approx. 1 pound) bread dough olive oil 10 large onions, diced 300 grams good quality bacon or smoked pork 1 cup crème fraiche or Greek strained yoghurt salt and freshly ground black pepper

Oil a large baking pan and preheat the oven to 200 C or 450 F.

On a lightly floured surface, roll out the dough to a piece the size of the baking pan and place it in the pan. Brush the surface with a little olive oil.

Sauté the bacon or smoked pork and onions over low heat with a little olive oil. Total sautéing time should be around 20 minutes.

Spread the yoghurt over the surface of the dough and on top of that spread the onion mixture. Salt lightly and sprinkle with pepper. Bake the tart for 40-45 minutes, or until the dough is golden. Remove, cool, and serve, wither warm or at room temperature.
