White Bean and Vegetable Soup

3 cloves garlic, peeled and chopped 1 red pepper, seeded and chopped 1 zucchini, chopped 1 stalk celery, chopped 1 onion, peeled and chopped 1 tbs olive oil 3 cup chicken broth 1 can (15.5 oz) small white beans, rinsed and drained 1 tsp chopped fresh rosemary salt and pepper, to taste

In 2 quart saucepot over medium high heat cook garlic, red pepper, zucchini, celery and onion in olive oil, 6min. Remove 1/2 cup sauteed vegetables; reserve. Stir in chicken broth, beans, and rosemary. Bring to a boil; reduce heat and simmer 10min. Remove 1/3 mixture. Puree in blender. Stir pureed mixture back into soup. Season with salt and pepper to taste, if desired. Top with reserved veggies.
