Vanilla Peach Pie

1 pkg(11 oz) pie crust mix 1 cup dried fruit bit 1/2 cup packed light brown sugar 1/2 cup + 1 tsp granulated sugar 1/2 cup flour 3/4 tsp ground cinnamon 1/2 tsp vanilla 1/4 tsp ground nutmeg 3 lbs frozen peaches, thawed' 1 egg beaten

Prepare crust mix according to package directions. Shape into 2 disks, one slightly largers than the other; wrap. Refrigerate. Combine fruit bits, brown sugar, 1/2 cup granulated sugar, flour, cinnamon, vanilla and nutmeg; atir in peaches. On floured surface, roll larger dough into 12" circle; fit into 9"pie pan. Spoon peach mixture into crust. Roll remaining dough into 9" circle' cut into 1" wide strips. Arrange in lattice pattern over pie filling; trim and flute edge. Refrigerate until firm, 15min. Place baking sheet on tack in oven; preheat to 375 degrees. Brush crust with egg; sprinkle with remaining sugar. Bake on hot baking sheet 1 hour 20min or until golden and bubbly. Cool.
