TUNA AND NOODLES - Better then Tuna Helper - LOL

3 Tbsp. butter 2 (6 to 7 oz. size) cans tuna in water 2 Tbsp. finely chopped parsley 1 c. heavy cream salt and pepper to taste 8 oz. noodles (medium or broad)

Heat butter in saucepan until melted. Add drained, broken-up tuna and parsley. Cook gently at low heat, uncov- ered, for 5 minutes. Begin cooking pasta. Drain thoroughly. Stir cream into tuna mixture in a slow stream. Add salt and pepper. Simmer, covered, for another 4 to 5 minutes. Do not let dish come to a boil! Mix tuna sauce and noodles together and serve immediately.

It's quick. Kids love it - very gourmet compared with tuna casserole!
