Pork Roulade

1/4 cup dried fruit bits 1 cup hot water 1 pkg(6 oz) pork stuffing mix 1 center cut boneless pork roast(3lbs), butterflied 1 tbs herbes de Provence(preserves) 1/4 cup apricot preserves

Heat oven to 425 degrees. In bowl, combine fruit and 1 cup hot water. Let sit 5min; drain. Prepare stuffing according to package directions; stir in fruit. Open pork like book. Spread pork with stuffing, leaving1" border. Roll lengthwise; tie. Coat with cooking spray; sprinkle with seasoning. Roast 10min. Reduce heat to 350 degrees; raost 45min more. Brush with preserves. Roast 10min or until meat thermometer reads 160 degrees.
