Enchiladas

1/2 cup chopped onion 2 cloves garlic, chopped 1 red pepper, cut into 1/4" pieces, 1 cup 1/2 cup frozen corn kernals, thawed 2 tsp cumin 1/2 tsp salt 1 can(15 oz) black beans, drained 1 pkg(10 oz) frozen chopped spinach, thawed, squeezed dry 1/3 cup chopped fresh cilantro 2 cans(10 oz each) mild enchilada sauce 8 (5 1/2") corn tortillas 1 cup fat free shredded cheddar cheese, 4oz reduced fat sour cream and cilantro, optional

Preheat oven to 350 degrees. Coat skillet with cooking spray. Heat over medium heat. Add onion and garlic; cook, stirring, until softened. Add peppers, corn, cumin and salt; cook, stirring until tender. Add next 3 ingriendients; cook, stirring, 5min. Stir in 1/2 cup sauce; cool. Reserve 1 can sauce; spread remaining in 12"x8" baking dish. Fill tortillas with bean mixture; roll up. Place in dish. Pour sauce over; top with cheese. Bake 20-25min. Top with sour cream and cilantro, if wanted.
