Egg Noodles with Mushrooms
1/2 pound wide egg noodles 2 T. butter 8 white mushrooms, sliced 1 shallot, finely chopped A handful fresh flat leaf parsley, chopped Salt, to taste
Boil egg noodles in salted water until just tender, about 6 minutes. Sauté sliced mushrooms and shallot in 2 T. butter over moderate heat until tender, about 3 to 4 minutes. Toss noodles with mushrooms and parsley. Season with a little salt. Makes 4 servings. Source: Rachael Ray
