Citrus Tomato-Basil Soup
1 can(28oz) whole peeled tomatoes with basil 1 white onion, peeled and chopped 2 large cloves garlic, peeled and chopped 1 tbs olive oil 1 cup chicken broth 1/4 cup chopped fresh basil 1 tbs fresh lemon juice salt and pepper to taste
Using back of wooden spoon or kitchen spears, chop tomatoes into small pieces. In 2 quart saucepot over medium high heat, cook onion and garlic in olive oil for 3min, or until onions are tender. Stir in chicken broth and tomatoe pieces with juice. Cook mixture 10min, or until heated through, stirring occasionally. Stir in basil and lemon juice. In bowl of food processor or blender, puree half soup until smooth. Return to pot and add back into chunky soup, stirring to combine. Season with salt and pepper to taste, if desired
