Cajun Pork Roast

4 lb boneless pork loin roast, tied 2 tbs chopped fresh cilantro 1 tbs dry Cajun seasoning 1 tbs dark brown sugar 3 cloves garlic, minced

Preheat oven to 375 degrees. Place pork in roasting pan. In small bowl, combine cilantro, cajun seasoning, brown sugar and garlic; rub over top and sides of prok. Roast pork until meat thermometer inserted into thickest part registers 160 degrees, 1 hour and 10min. Let stand 10min before slicing.
