Creamy Asparagus Soup

This is a great use of leftover mashed potatoes. This soup is so delicious no one will know the asparagus came from a can. To make this a speacial meal serve with crusty french bread and top with grated parmesan cheese or a spoonful of sour cream.

2 cups Mashed Potatoes 1 (14.5 oz) can Asparagus, drained 1 (14 oz) can Chicken Broth 1 1/2 cups Milk 1/4 teas. Thyme, crushed

Put mashed potatoes, asparagus, and broth in blender. Blend until smooth. Pour into large saucepan.

Add milk and thyme. Stir until heated through over medium heat. DO NOT BOIL. pour into bowls and sprinkle with grated parmesan cheese or add a dollup of sour cream. Serve 4.
