Chilaquilas (Spicy Tortilla Casserole)
1 lb. ground beef 1 medium onion 1/4 t. rosemary 1/2 t. salt 1/8 t. pepper 1 can tomato sauce (8 oz) 1 can (19 oz) enchilada sauce 1/2 lb. cheddar cheese, sliced 1/4" thick 8 corn tortillas Ripe olives to garnish
In large skillet, cook beef and onion. Add seasonings and brown well. In pan, mix tomato and enchiladas sauce.Pour 1/2 of the mixture over meat and seasonings. Simmer for 15 minutes. Simmer remaining sauce also. Put 4 corn tortillas in bottom of 9 x 9" or 10 x 10" casserole, overlapping. Pour meat mixture over tortillas. Top with 1/2 of the cheese slices. Top with remaining 4 tortillas and then remaining cheese slices. Pour sauce over all. Cover. Bake at 350 for 30 minutes. Garnish with ripe olives. For a less spicy casserole, use 2 cans (8 oz each) tomato sauce and 1 can (10 oz) enchilada sauce. Serves 6
