Fried Chicken in Cream Gravy
2 1/2 lbs. frying chicken, cut up
1/2 cup flour
1 1/2 t. salt
3/4 t. pepper
4 T. butter
4 T. shortening
2 T. flour
2 cups light cream
Shake chicken pieces in bag with flour, salt and pepper. In electric skillet at 375, melt butter and shortening and add chicken. Brown quickly on all sides. Reduce heat to 325. Cover and continue frying for 25 to 30 minutes. Turn occasionally. Remove cover during last 10 minutes of cooking. When chicken is done, remove from skillet and drain off all but 2 T. of fat. Stir in flour land add cream gradually, stirring constantly. Adjust seasoning if desired and cook until thickened. Pour over chicken. Serves 4 Source: My Old Recipes
