Black Russian Pie
1- 9-inch chocolate cookie crust
1/3 c. Kahlua
2 envelopes unflavored gelatin
1/2 c. milk, heated to boiling
2 eggs
1/2 c. sugar
2/3 c. vodka
1-1/2 c. whipping cream
Put Kahlua, gelatin and heated milk into blender. Cover and blend on
low speed until gelatin is dissolved. Add eggs, sugar and vodka. Blend
until thoroughly mixed. Pour mixture into a large bowl and chill in the
refrigerator for 15 minutes or until slightly thickened, stirring
occasionally. Pour whipping cream into blender and blend on low speed
until thickened. Fold into gelatin mixture and pour into piecrust.
Chill until set.
