Baked Chocolate Rice Pudding

2 oz. unsweetened chocolate4 cups milk
1/2 t. salt
2/3 cup sugar
3 T. long grain rice
Whipping cream (optional)

Preheat oven to 300. Butter an 8" square baking pan and set aside. Chop
chocolate into small pieces and put in the top of a double boiler over hot,
not
boiling water. Stir until smooth. Remove from heat. Put all ingredients in
the
prepared pan and stir well to blend. Bake 3 1/2 hours, stirring 3 times
during the first hour of baking so the rice doesn't settle. Serve warm or
cold
with whipped cream if desired. Serves 6 to 8
