Sunday Morning Ham & Cheese Waffles
2 c. sifted flour
2 t. baking powder
¾ t. salt
1/3 c. oil
1 c. finely shredded Cheddar cheese
3 egg whites, stiffly beaten
3 egg yolks, beaten
Cooked ham, diced
1¾ c. milk
Measure dry ingredients into mixing bowl. Blend. Combine egg yolks
and milk. Stir into dry ingredients. Stir in cooking oil. Add cheese
and blend well. Carefully fold in egg whites. Do not over-mix. Pour
approximately 7/8 c. batter onto the preheated Belgian Waffle iron.
Sprinkle 2 T. finely diced ham over batter, before closing waffle
iron. Close and bake about 4 minutes. Serve hot with butter and warm
syrup. Makes 5 to 6 waffles.
