World-Renowned Pastry Chef Gale Gand Gives Baking Tips to Entrants

BENTON HARBOR, Mich., Oct. 4 Whirlpool brand is calling
all amateur bakers to pull out their finest story-telling cakes for its third
annual Great American Cake-off, a nationwide search for America's most unique
cakes and the stories that go with them.
Whether your cake speaks of unrequited love, turbulent times, or special
memories of grandma, the Great American Cake-off is an opportunity to display
the creation that best exemplifies you or your family's story.
"Nothing brings out love more than baking a cake for someone special,"
said Food Network host and famous restaurant owner Gale Gand, who will once
again serve as judge for the contest. "Many cake recipes are time-honored
family treasures and are used to celebrate only the most important occasions.
The occasion really doesn't matter -- birthday, anniversary, holiday -- it's
all about bringing people together."
Entrants must submit a recipe with cooking directions, a photograph of the
cake and the story behind it. Judging will be based on the following:
story/history, originality and ease of recipe.
One grand prize winner will receive $5,000 and a Whirlpool(R) suite of
kitchen appliances. Two runners-up will receive a Whirlpool(R) suite of
kitchen appliances.
"Whirlpool brand loves cooking and knows there's more to a great cake than
just the batter or the oven that bakes it," said Lyn Cook, Whirlpool senior
home economist. "In the past we have received many inspired recipes, creative
photos and heart warming stories. We become a part of their cake stories
forever."
Past winners have included Sandi Klinger of Auburn, Alabama and her My Big
Fat Bumpy Life Cake and Elizabeth Kisch of Dayton, Ohio and her Chocolate
Coffee Toffee Cake.
Following are Gale Gand's top ten baking tips:

-- When making a layer cake, flip the layers over to make the bottom be
the top, creating a nice flat surface for frosting.
-- To make an easy marble cake, make your favorite golden cake, pull off
one third of the batter and mix in some cocoa powder. Then place
spoonfuls of the two different batters into a cake pan and swirl it
with a knife before making.
-- Freeze cake layers before cutting them into thinner layers. Frozen
cake holds together better.
-- When making cake layers, double the batch and freeze the extra layers
for an impromptu layer cake. All you need to do is make frosting and
assemble it.
-- Use family heirloom recipes for well-tested recipes that have been
tried and true.
-- Can't beat the crumbs? If you can't fix it, feature it. Pat crumbs
made from leveling off the top of the cake on the outside of the cake
walls for a finished look. Ground nuts or crushed cookies work well
too.
-- For a tender cake, do not over bake it. It's done when it pulls away
from the sides of the pan and springs back when you press down on the
middle of the cake with your fingers.
-- Let a cake cool in the pan for five minutes before turning it out onto
a wire rack. That will help it release from the pan more easily.
-- Only fill cake pans two-thirds full with batter or they may overflow.
-- Never frost a cake until it is completely cool.
