Pan Fried Skate with Spicy Rice.
Ingredients.
For the rice
110g/4oz rice
1 tsp cumin seeds
1 tsp coriander seedss
pinch of chilli flakes
pinch of turmeric.
For the skate
1 skate
salt
freshly ground black pepper
1-2 tbsp olive oi1 lemon
equal quantities of water and sugar
1 tbsp fresh coriander, chopped.
For the pesto
55g/2oz goats cheese, crumbled
handful of fresh flatleaf parsley
6 tbsp olive oil
freshly ground black pepper
2 lemons
Method
1. To make the rice, bring a large pan of water to the boil.
2. Add the rice and cook the rice for ten minutes, or according to
packet instructions.
3. Stir in the cumin, coriander seeds, chilli flakes and turmeric
to the rice and heat for a further two minutes.
4. Carefully remove the bone from the skate, to leave the fillets.
5. Season the fillets.
6. Heat a frying pan brushed with a little oil and fry the skate
for 2-3 minutes on each side.
7. Bring a medium pan of water to the boil.
8. Peel the lemon using a vegetable peeler and then thinly slice
the peel.
9. Blanch the peel in the boiling water for 1-2 minutes then remove
and refresh in cold water.
10. Place equal quantities of water and sugar into a small pan and
add the lemon peel. Simmer gently for five minutes.
11. Remove the rice from the heat and stir in the fresh coriander.
12. To make the pesto place the goats cheese, parsley and olive oil
into a food processor and blend together.
13. Transfer the rice to a serving plate and serve the skate
alongside. Drizzle with the pesto.
14. Pour the lemon syrup mixture over the dish and serve.
