BLUEBERRY BREAD PUDDING

10 slices raisin toast bread, crusts removed
1- 1/4 0z butter, room temperature [ 50g ]
1/2 cup strawberry jam
5-oz blueberries [ 150 g ]
10-1/2 fl oz pouring cream
1 -1/4 cups buttermilk [ 375 ml ]
4 eggs
ice cream or cream to serve

Lightly grease a 8 inch square or round ovenproof dish.
Spread both sides of the bread with butter. Spread one side
of each slice of bread with the jam. Cut each slice of bread in half
to form 2 triangles. Layer the bread and blueberries in the greased dish.
Whisk the cream, buttermilk and eggs together.
Pour over the bread and set aside for 30 minutes to allow time for the bread to
absorb some of the liquid.
Preheat oven to 160C.
Bake the bread pudding for 40-50 minutes or until golden brown.
Set aside for 10 minutes. Serve with ice-cream or cream.
