Maple Baked Beans
1 lb dry white pea beans (I like Pinto beans)
1 cup Maple syrup
1/2 cup chili sauce
1 small onion, diced
2 tsp salt
1 tsp dry mustard
3 slices bacon, cut into 1" pieces
2 cups boiling water
Place beans in sauce pan, cover with water & bring to a boil. Reduce
heat & simmer for 2-3 minutes. Remove from heat & let it for 1 hour.
Drain. In a small bowl combine maple syrup, chili sauce, onion, dry
mustard & salt. Place half the beans in a 2 quart casserole dish, top
with slice bacon & remaining beans. Pour syrup mixture over beans. Add
boiling water. Cover & bake at 300F for six to seven hours, adding
water as needed to keep beans moist. Serve!
