[ world famous recipes ] Polenta Pudding
Sweet Orange Polenta Pudding.
[ polenta is also known as cornmeal. ]

2 cups milk
1 cup of instant polenta
3/4 cup pouring cream
1/2 cup white sugar
1 teaspoon vanilla extract
2 oranges, peeled. pith removed, sliced.
Preheat oven to 200 C. Grease a 4-cup capacity baking dish.
Pour milk into a large saucepan and bring to the boil over
medium- high heat. Add polenta in a thin, steady stream,
stirring constantly with a wooden spoon.
Cook, stirring, for 5 minutes or until thick.
Remove from heat.
Add cream, sugar and vanilla to polenta. Stir until well combined.
Spoon into baking dish. Smooth surface using a large metal spoon.
Top with orange slices. Bake for 30-35 minutes or until
light golden.
