Splenda Angel Food Cake
12 servings
1 1/2 cups egg whites (whites from 10 to 12 large eggs)
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla extract
1/4 cup SPLENDA® Sugar Blend
1/2 cup light corn syrup
1 cup sifted cake flour
1/4 cup cornstarch
3/4 cup SPLENDA® Sugar Blend

PREHEAT oven to 350°F.
PLACE egg whites in a large mixing bowl; let stand at room temperature for
30 minutes. Add cream of tartar and vanilla extract. Beat at high speed with
an electric mixer until soft peaks form. Gradually add 1/4 cup SPLENDA®
Sugar Blend and light corn syrup.
SIFT flour and cornstarch 2 times into another large mixing bowl. Add 3/4
cup SPLENDA® Sugar Blend to flour mixture, stirring until blended.
SPRINKLE 1/4 of the flour mixture over the egg whites. Fold gently. Repeat
procedure three times with the remaining flour mixture.
POUR batter into an ungreased 10-inch tube pan, spreading batter evenly in
pan. Cut through batter with a knife to remove air bubbles.
BAKE on lowest rack in oven for 40 to 45 minutes, or until cake springs back
when lightly touched.
INVERT tube pan; cool cake in the pan for 30 to 40 minutes.
LOOSEN cake from sides of pan using a narrow metal spatula; remove cake from
pan.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine
1/2 cup SPLENDA® Sugar Blend
1/2 cup firmly packed light brown sugar
1 teaspoon vanilla extract
2 large eggs
1 (12-ounce) package semi-sweet chocolate morsels

PREHEAT oven to 375° F.
COMBINE flour, baking soda, and salt in a small bowl. Set aside.
BEAT butter, SPLENDA® Sugar Blend, brown sugar, and vanilla at medium speed
with an electric mixer until blended. Add eggs, one at a time, mixing well
after each addition. Scrape sides of bowl. Gradually add flour mixture,
beating until blended. Stir in chocolate morsels.
SPOON rounded tablespoons of cookie dough onto ungreased baking sheets.
BAKE cookies 9 to 11 minutes or until lightly browned. Remove from oven and
cool on a wire rack.

1 cup boiling water

Melt red hots in 1 cup boiling water. Pour over Jell-O and stir until dissolved. Let stand until slightly set. Add applesauce, celery and pecans. Refrigerate until firm.

INGREDIENTS:
1 cup (2 sticks) butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups flour
2/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
1/2 cup toasted, slivered almonds
1 3/4 cups Milk Chocolate Chunks

DIRECTIONS:
Heat oven to 350 degrees. In a large mixing bowl, beat
butter, sugar, eggs, and vanilla until light and fluffy.
Stir together flour, cocoa, baking, soda, and salt; add
to creamed mixture. Stir in almonds and milk chocolate
chunks. Drop by tablespoons onto ungreased cookie sheets.
Bake 8 to 10 minutes or just until set. Cool slightly;
remove from cookie sheet onto wire rack. Cool completely.

To toast almonds: Preheat oven to 350 degrees. On shallow
baking pan, place slivered almonds on pan and toast until
lightly browned, about 8 to 10 minutes.

PREHEAT oven to 425°F. Unroll pizza crust on lightly greased baking sheet. Pat out dough with fingers to form 12x10-inch rectangle. Bake 5 minutes.
MIX mustard, garlic and oil; spread evenly over dough. Sprinkle evenly with cheese and rosemary.
BAKE 8 to 9 minutes or until crust is deep golden brown and cheese is melted.

Special Extra
For an extra crispy crust, slide baked pizza directly onto oven rack and bake for a few additional minutes.

Great Substitute
Prepare as directed, using 1 Tbsp. chopped fresh rosemary.

substitute became the regular organist!

Hummingbird Cake Mix in a Jar

2 cups flour
1 1/3 cups sugar
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
2/3 cup pecans; chopped
----Frosting----
1/2 cup vegetable shortening
4 cups powdered sugar
in a large bowl, mix flour, baking; soda, salt and cinnamon.
Hummingbird Cake: Empty jar of cake mix into large mixing bowl. Stir mix
with large wooden spoon to evenly distribute ingredients. Add 1 cup
vegetable oil, 3 beaten eggs, 8 ounce can crushed pineapple (undrained), 2
cups mashed bananas and 1
1/2 tsp. vanilla. Mix until all ingredients are moistened, but do NOT
beat. Spread batter into a greased 10 x 15 inch cake pan OR a greased Bundt
cake pan. Bake at 350 degrees F for 55 - 60 minutes. Cool, then frost
with Humming Bird Cake frosting. (recipe below)
Hummingbird Cake Frosting Mix: Mix ingredients in a medium sized bowl,
using a pastry blender or two butter knives. Place mix into a quart size
canning jar. It is helpful to tap jar lightly on a padded surface (towel
on counter) to make ingredients fit neatly. Place lid on jar. When
storing this mix, be sure to store it in a cool, dry place, as heat will
cause the vegetable shortening to go rancid. Mix will last 3 - 6 months.
Use scissors to cut a 9 inch-diameter circle from fabric of your choice.
Center fabric circle over lid and secure with a rubber band. Tie on
raffia or ribbon bow to cover the rubber band. Attach a card with the
following directions:
Humming Bird Cake Frosting: Pour mix into a large bow. Add one 8 ounce
package of Cream Cheese and 1 tsp. Vanilla to mix, and beat with electric
beaters until fluffy. Spread on Hummingbird Cake.
NOTES : Mix may be stored in a cool, dry place for 6 - 9 months.

50 ml kecap manis sauce 1/4 cup
50 ml soy sauce 1/4 cup
250 ml chicken stock 1 cup
40 ml chili bean sauce 3 tbsp

Directions
Heat wok on high heat until the wok slightly smokes. Add oil; wait 5 seconds.
Add ginger and stir fry for 10 seconds. Add all vegetables and stir fry until tender.

Add sauce tossing to coat. Add noodles; toss to coat. Heat for 30 seconds or until noodles are hot.

Serves 4

2 c. chicken broth
2 (8-oz.) pkg. frozen cauliflower
1 stalk celery, cut into ½”pieces
1 small onion, cut into eighths
½ tsp. thyme
salt and pepper, to taste
1 c. milk
1 ½ c. cheddar cheese

Throw all ingredients except milk and cheese into a crockpot and cook on low
until vegetables are very tender, about 4-6 hours. With a potato masher,
mash vegetable to desired consistency. Add milk and cheese. Serve when cheese is
melted.
Serve with: a green salad and whole wheat rolls

This recipe comes from my great grand-mother, it came with her from
Prussia.

Cream:
1/2c. rendered lard (shortening)
1 c. sugar

Add: 1 egg, lightly beaten

Sift: 3 c.flour
3 tsp. baking powder
1/4 tsp.salt
Add to creamed mixture alternately with 1/2 c. milk
Add 1 tsp. vanilla (For special flavor add 1 tsp. nutmeg, 1
tsp.almond axtract.
Mix well. Chill.(about 1 1/2 hours)
roll out fairly thin. Cut in desired shapes. Lift with spatula to
lightly greased pans.
Bake at 375 degrees for 8-10 minutes.
I frost them and decorate.

I love these cookies around the holidays, they are great fun for the
family get togethers.

Mix with creamed mixture.

Combine:
1 c. cream
1 c. milk
1 tsp. vanilla

Add liquids alternately with 8 1/2c. more flour, making a soft
dough. Set in a cool place or refridgerator over night.
Drop by spoonful onto lightly greased baking sheet. Bake at 400
degrees until lighly browned.

FREEZE AND STORE NUTS

Almonds, pecans, walnuts etc. can be sealed in a bag in the refrigerator
or freezer. Stored properly, they will keep taste and texture quality for up to two years. Place shelled nuts in plastic bags or containers and remove as much air as possible and freeze.

Roasting nuts enhances their flavor and crunchy texture and gives them a toasty brown appearance for visual appeal.

To roast sliced, slivered or chopped nuts, spread in a single layer in a shallow baking pan and roast at 350 degrees for 5 to 10 minutes.

If frozen or chilled, bring almonds, pecans and walnuts to room temperature before roasting. You can also roast nuts in a microwave, but be careful to not overcook them. Arrange in a single layer in a shallow microwave-safe dish and cook on High power, stopping every minute to stir and distribute the nuts for even browning. Watch color and check aroma. Chopped nuts can microwave in as little as 2-1/2 to 3 minutes.

Always grind pecans, almonds and walnuts at room temperature to prevent them from exuding too much oil.

Hurray for the nutty sweetness and deep nourishment we get from roasted harvest squashes! This ultra-simple recipe practically makes itself, and the results embody all the colors, textures, and flavors of fall.

A touch of butter and maple syrup is all it takes to turn this dish into a masterpiece (or you can add optional fresh ginger and pecans to really gild the lily). Anti-oxidants, minerals, and true fall taste: Maple-Roasted Acorn Squash has it all. Adapted from Comfort Food (Taunton Press, 2004).

Maple-Roasted Acorn Squash

2 acorn squash 3 tablespoons unsalted butter, softened 1/2 teaspoon kosher salt 4 tablespoons maple syrup 3 teaspoons minced fresh ginger (optional) 4 table spoons chopped pecans (optional)

1. Preheat oven to 400F. Slice a thin piece off both ends of the squash, including the stem. Cut the squash in half crosswise (perpendicular to the ribs). Scoop out the seeds with a sturdy spoon.

2. Line a pan in which the squash can fit snugly with foil or parchment paper. If you use foil, rub with butter to prevent squash from sticking.

3. Set the squash halves in the prepared baking pan and smear the flesh with the softened butter. Sprinkle with the salt. Drizzle maple syrup over the cut edge of the squash and into the cavity (most of the liquid will pool there) and sprinkle with the ginger, if using.

4. Roast the squash halves until nicely browned and very tender when pierced with a fork, about 1 hour and 15 minutes for a small to medium squash (larger squash may take longer); add the pecans, if using, for the last 10 minutes of cooking. Do not undercook. Serve warm with a spoon.

Serves 4.

Serves: 6

Ingredients:
1kg beef topside, cut into fairly large cubes
1/2 c grated coconut
2 coconuts *
(A) POUND FINELY
10 fresh chillies, seeded
10 dried red chillies, seeded
4cm galangal
1 tsp fennel powder (jintan manis)
1 tsp cumin powder (jintan putih)
1 tsp turmeric powder
1 tsp ground white pepper
1/2 tsp ground black pepper
(B) SPICES
4cm cinnamon stick
7 cardamoms (buah pelaga)
6 cloves
2 star anise
(C)
2 stalks lemon grass, smashed
3 pcs dried tamarind skin (asam keping)
1 pandan leaf, knotted
1 turmeric leaf, slightly shredded and knotted
SEASONING
1 tsp salt or to taste
2 tsp brown sugar or palm sugar (gula Melaka)
4 kaffir lime leaves (daun limau purut), torn

Instructions:
*grated and squeezed for thick coconut milk then add 2½ cups water to
the residue to mix and squeeze out for general santan

Marinate beef cubes overnight with 2 tbsp of the ground ingredients (A).

Fry the grated coconut till golden, then pound finely (the result is
called kerisik).

Heat coconut milk with the pounded ingredients (A) and spices (B) in a
deep pot or earthen pot until mixture comes to a boil.

Add the marinated beef and ingredients (C) and simmer over low heat
for 1½-2 hours.

Stir occasionally to prevent the meat from sticking to the pot. Add
the kaffir lime leaves.

When the gravy becomes thick, add the kerisik and lower the heat. Stir
briskly until mixture is thick and gravy coats the meat evenly.

Add seasoning to taste, then dish out and serve with rice.

Serves: 4

Ingredients:
3 c Cooked rice
1 Chicken (3 pounds)
1 Onion
3 tbsp Sesame oil
2 tbsp Light soy sauce
1/2 tsp Salt
1/4 tsp Pepper

Instructions:
Spread cooked rice in a pie pan. Chop chicken into large pieces. Cut
onion into wedges. In a wok or large pan heat sesame oil and brown
the chicken with the onions until the onions are transparent. Add soy
sauce and sprinkle with salt and pepper. Put the chicken on the
cooked rice in the pie plate. Steam for about 30 minutes or until
the chicken is done. Serve warm.
If you have a rice cooker, you can just put the braised onions and
chicken on top of the raw rice and cook it that way.

Disney Holiday Baking Tips
a.. Replace a portion of sugar with an equal amount of corn syrup for more browning and a crisper cookie.
b.. Replace a portion of white sugar with an equal amount of honey for a cookie that will soften up after cooling (honey and brown sugar absorb moisture from the atmosphere).
c.. Give friends a basket of cookie mix instead of the cookies and you'll have a lot less work!
d.. Mix up the dry ingredients for your favorite cookie and package in decorative bags or containers with a listing of the needed wet ingredients and the directions for finishing the cookies.
e.. Make cookie dough a month or two in advance and freeze either in bulk, as logs, or discs if it will need to be rolled out later. Even normal drop cookies like chocolate chip can be made into slice-and-bake logs. Simply shape into logs on top of plastic wrap, roll up, and chill until finn.
f.. Use parchment paper for easy clean-up.
g.. Have multiple sets of measuring cups and spoons. Reserve one set of each for wet and sticky ingredients like peanut butter, corn syrup, honey and extracts.
Holiday Cookie Recipe from BoardWalk Bakery at Disney's BoardWalk

Pecan Shortbread Cookies with Maple Glaze
Preparation Time: 30 minutes

3 1/4 cups all-purpose flour
1 pound butter
1/2 cup rice flour
1 1/2 cups confectioners' sugar
1/2 tsp baking powder 2 tsp vanilla extract
1/2 tsp salt
1 1/2 cups chopped pecans

1.. Mix together the flour, rice flour, baking powder and salt in medium size bowl. Set aside.
2.. In a mixer with the paddle attachment, cream butter on low speed for 3 to 4 minutes.
3.. Add sugar and vanilla and continue to cream on moderately low speed for 2 minutes.
4.. On low speed mix in the dry ingredients, blending just until the particles of flour are absorbed.
5.. Add in the pecans.
6.. Roll into logs about 2" wide. Wrap in plastic or parchment, and refrigerate or freeze until needed. (These can also be rolled out and cut into shapes.)
7.. Slice the logs and bake at 325° F about 40 minutes.
Icing:

1/2 cup butter
2 tsp hot water
2 cups confectioners sugar
2 tsp maple flavoring
1 tsp vanilla extract

1.. Mix the butter, confectioners sugar and vanilla together.
2.. Add in the water and maple flavoring to reach the consistency for pouring or spreading icing.

Ingredients


1 pkg. (18 oz.) spice or carrot cake mix
1 cup LIBBY'S 100% Pure Pumpkin
3 large eggs
1/3 cup water
3 tablespoons vegetable oil
1 teaspoon pumpkin pie spice
2 pkgs. (3 oz. each) cream cheeese softened
2 tablespoons margarine or butter softened
1 1/2 teaspoons vanilla extract
4 cups powdered sugar
0 *Black string licorice, NESTLÉ RAISINETS Milk Chocolate-Covered Raisins and Halloween candy corn (optional)


Directions


FOR CAKE:
PREHEAT oven to 350º F. Grease and flour two 8- or 9-inch-round cake pans.

COMBINE cake mix, pumpkin, eggs, water, vegetable oil and pumpkin pie spice in large mixer bowl until moistened. Beat for 2 minutes or until thoroughly mixed. Pour batter into prepared pans.

BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Frost with Cream Cheese Frosting.

FOR CREAM CHEESE CROSTING:
BEAT cream cheese, margarine and vanilla extract in small mixer bowl until light and fluffy. Gradually beat in sugar. Spread between layers and on top and side of cake.

TO GARNISH:
FORM licorice strings into ghost shapes; press into side of frosted cake. Use Raisinets for eyes. Arrange candy corn! between ghosts on side and around top edge of frosted cake.

Things I've learned from my Boys (honest and not kidding):





1. A king size waterbed holds enough water to fill a 2000 sq.ft.
house 4 inches deep.

2. If you spray hair spray on dust bunnies and run over them with
roller blades, they can ignite.

3. A 3-year old Boy's voice is louder than 200 adults in a crowded
restaurant.

4. If you hook a dog leash over a ceiling fan, the motor is not
strong enough to rotate a 42 pound Boy wearing Batman underwear and
a
Superman cape. It is strong enough, however, if tied to a paint can,
to
spread paint on all Four walls of a 20x20 ft.room.

5. You should not throw baseballs up when the ceiling fan is on.
When using a ceiling fan as a bat, you have to throw the ball up a
few a
times before you get a hit. A ceiling fan can hit a baseball a long
way.

6. The glass in windows (even double-pane) doesn't stop a baseball
hit by a ceiling fan.

7. When you hear the toilet flush and the words "uh oh", it's
already too late.

8. Brake fluid mixed with Clorox makes smoke, and lots of it.

9. A six-year old Boy can start a fire with a flint rock even though
a 36-year old Man says they can only do it in the movies.

dizzy.

"Good morning, Father", and started to walk away. One of the priests
couldn't stand it any longer. "Just a minute young lady." Yes?"
she replied. "We are priests, and proud of it, but I have to know,
how in the world did you know we are priests - dressed as we
are?"

and cook until softened. Remove from skillet. Wipe out skillet with
paper towel. Spray nonstick skillet with vegetable cooking spray.

with half the cooked vegetables. Cook until set but still moist on
top, lifting edges of omelet with spatula. Sprinkle with half the
cheese and fold in half. Place on 1 bread slice and top with another
bread slice. Repeat with remaining ingredients. Serves 2.

Sauteed Greens

Prepare:
2 bunches collard greens (6-8 cups prepared)

Sautee Greens In:
1 T. olive oil

Add:
1 T. garlic, minced
2-3 T. chicken broth or water
Salt and black pepper to taste

Prepare greens by removing the tough stem. Roll leaves into a cylinder and
cut into wide ribbons.

Saute greens with olive oil in large saute pan over high heat, 1-2 minutes.

Add garlic and saute greens another 1-2 minutes, tossing constantly. Add
chicken broth (or water), salt, and pepper, and cook uncovered 3-4 more
minutes until tender but not mushy-they should still be bright green! Serve
immediately.

1 egg
1 tub Betty Crocker® Rich & Creamy vanilla or butter cream ready-to-spread frosting
8 fudge-dipped flat-bottom ice-cream cones
Betty Crocker® Fruit Roll-Ups® strawberry chewy fruit snack rolls
Shredded whole wheat cereal biscuits, crushed
Assorted candies, such as candy corn, red string licorice and small gumdrops
32 candy eyes
1 tub Betty Crocker® Rich & Creamy chocolate ready-to-spread frosting
48 large black gumdrops
Black shoestring licorice, cut into 4-inch pieces

1. Heat oven to 375ºF. Place paper baking cup in each of 16 regular-size muffin cups, or grease and flour muffin cups.
2. Beat Bisquick mix, sugar, milk, shortening, vanilla and egg in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Fill muffin cups about half full.
3. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediantly remove from pan; cool completely. Frost and decorate cupcakes as directed below for Scarecrows and Hairy Spiders.
Scarecrows: Frost 8 cupcakes with vanilla frosting. Decorate each ice-cream cone with bow made with fruit rolls. Place ice-cream cone upside down on each cupcake for hat. Arrange crushed cereal on cupcakes for hair. Use candy corn for nose, red licorice and small gumdrops for mouth and candy eyes for eyes.
Hairy Spiders: Frost 8 cupcakes with chocolate frosting. Squeeze large black gumdrops, one at a time, through garlic press to form hair; arrange on cupcakes. Insert black licorice pieces into cupcakes for legs. Place candy eyes on large black gumdrops for eyes.

High Altitude (3500-6500 ft)
Use paper baking cups. Increase milk to 2/3 cup. Bake 20 to 25 minutes.

RECIPE: THICK WANDIES FRIED COOKIES


Thick Wandies

This recipe has been perfected over the years and this is the best yet. We have even frozen these cookies with no problem. A shortcut to note: We use a pasta machine to roll strips of the dough and then cut. Prep Time: approx. 45 Minutes. Cook Time: approx. 5 Minutes. Ready in: approx. 4 Hours . Makes 9 dozen (108 servings).

10 eggs
2/3 cup white sugar
1 tablespoon vanilla extract
1 cup heavy cream
8 teaspoons baking powder
1 teaspoon salt
8 cups all-purpose flour
2 quarts oil for frying
2 cups confectioners' sugar for dusting


Directions

1 Heat 2 inches oil in a deep-fryer or deep cast iron skillet to 375 degrees F (190 degrees C).


2 In a large bowl, beat the eggs, sugar, vanilla, heavy cream baking powder and salt with an electric mixer until smooth and well blended. Gradually mix in the flour, 1 cup at a time until the batter is too stiff to stir. Turn out onto a floured surface and knead in enough additional flour to make a smooth and soft dough. Roll out pieces of dough to 1/4 inch thickness. Cut into 2x3 inch rectangles. Make a slit in the center of the square but do not go all the way to the ends.

3 Fry cookies in hot oil, turning once, until golden.
Drain in a colander. When the cookies are all fried, place them into a large container and dust them with confectioners' sugar.

We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.

Makes: 12 buscuits Total Time: 35 Minutes
Combine:
2 cups self-rising flour
1 1/2 cups cake flour
2 T. sugar
1 t. salt
1/2 t. baking powder
1/4 t. baking soda
Cut in:
1/3 cup vegetable shortening
Stir in:
2 cups buttermilk
Sift over Work Surface and Dough:
1/2 cup all-purpose flour, divided
Cut Biscuits; Brush with:
2 T. unsalted butter, melted
Heat oven to 475°. Spray two 8" round pans with cooking spray.

Combine flours, sugar, salt, baking powder, and baking soda.

Cut shortening into the flour mixture using a pastry blender.

Stir in buttermilk completely, then let the dough rest 2-3 minutes.

Sift 1/4 cup of the all-purpose flour onto the work surface, then turn out
the dough onto the surface. Sift remaining flour over dough. Turn and fold
dough over several times in flour and gently pat to 3/4" thick.

Cut biscuits with a floured 21/2" round cutter. Place 6 biscuits in each
pan. Gently reroll scraps without overworking the dough or adding additional
flour.
Brush tops of biscuits with melted butter. Bake 15 minutes, or until tops
are golden.

Makes: 6 CupsTotal Time: 45 Minutes

Cook:
1 lb. dry linguini
Saute in 2 T. Olive Oil:
1 T. garlic, minced
1 t. anchovy paste
1/4 t. red pepper flakes
Add and Simmer:
3 cups (two 14.5-oz. cans) canned diced tomatoes with juice
2 T. oil-packed sun-dried tomatoes, minced
1 T. brown sugar
2 t. balsamic vinegar
Add:
1/4 cup kalamata olives, pitted and slivered
3 T. chopped fresh oregano (11/2 t. dried)
3 T. chopped fresh parsley
2 T. brined capers, drained
Salt to taste
Optional-
Top Each Serving with:
3-4 T. oil-packed albacore tuna, drained and flaked into large chunks

Cook pasta according to package directions.

Saute the garlic, anchovy paste, and pepper flakes in a saute pan over
medium heat. Stir, cooking for 30 seconds-it will smell strong because of
the anchovies.

Add tomatoes, sun-dried tomatoes, brown sugar, and vinegar; stir to combine.
Simmer sauce until slightly reduced, 10-15 minutes.
While sauce simmers, prepare olives and herbs; pour capers into a small
dish-it's easier to measure them that way.

Add the olives, herbs, capers, and salt to the sauce, plus some pasta
cooking water if it seems thick. Transfer the sauce to a large shallow bowl
and top with the drained pasta. Toss until pasta is evenly coated with
sauce.

Top servings of pasta with optional tuna before serving.

A "fresh" tip
Buy day-old bread from a good bakery. It~s cheaper, works better for bread
crumbs, and it's already stale for stuffing. Plus, the baker might just
throw in a cookie!

Perfect Slicing:
When I need evenly sliced strawberries (especially for topping a dessert), I
use an egg slicer. Stem the berries first, then slice just like you would a
boiled egg. It's quicker than using a knife!

Hands-free Meatloaf
If you don't like getting your hands messy when mixing meatloaf, put the
ingredients into a large, resealable plastic bag. Close the bag, then
"knead" everything together until well mixed. Kids like helping with this
too!

Filling Pasta
Stuffing manicotti is difficult, but if you use a pastry bag without a tip,
it's a breeze! Just spoon the filling into the bag, then squeeze it into the
cooked pasta tubes.

Board Storage
I have several small cutting boards that I use frequently in the kitchen. To
store them on the counter where I can easily reach them, I use something
that's usually found on an office desk-a vertical sorter! I have a small
black metal type with three slots, but plastic works well too. It's easy to
clean, looks nice, and the cutting boards stand up in it, out of the way.

Skimming Fat
To remove excess grease from browned ground beef or sausage, blot" the extra
fat from the pan using a piece of bread. This also works for skimming fat
off of the top of soup or chili, and it's great for absorbing oil when
cleaning off the bottom of a pan.

Soggy-less Rice
When cooking rice, put a folded towel between the lid and the pot. That way,
when the rice steams and creates moisture, the condensation doesn't drip
back into the rice. It's absorbed into the towel! Cook the rice for
the recommended amount of time.

Scorch Saver
Before heating milk, rinse the pan with cold water (do not dry). This keeps
the milk from scorching.

Coating Cake Pans
Whenever I bake cakes, rather than greasing and flouring the pans, I grease
and sugar them. Sugar spreads better than flour and doesn't clump or leave a
floury film on the baked cake. Instead, it leaves a slightly sweet coating
on the bottom and sides.

Great Grippers
As I've gotten older, it's become harder for me to open new jars. But I've
solved the stubborn lid problem by wearing rubber gloves when opening them-
non-skid and non-slip!

Artichoke Holders
Artichokes tend to fall over in the pot when steaming. To steady them, place
thick rings of onion on the bottom of the pot, then set the artichokes on
top. Not only does this hold the artichokes upright, but they cook more
evenly, too, and the onion imparts great flavor.

Hammer Time
When pounding meat for cutlets or for tenderizing, a meat mallet often tears
the plastic bags or wax paper. To solve this problem I purchased a large
rubber mallet at the hardware store. Not only does it work great tor
pounding and tenderizing meats but it's also indespensible for breaking
apart frozen foods, such as vegetables and fruit, allowing me to get just
the amount I need. It's also ideal for breaking up chunks of ice.

Hi everyone.
I found the following sauce and tried it. It is great and easy!

Pomodoro Sauce



2 garlic cloves, minced

2 tablespoons onion, diced

2 tablespoons olive oil

2 tomatoes, chopped

3 tablespoons fresh herbs (oregano, basil, parsley), chopped

Salt and pepper, to taste

Pinch of sugar



In a saucepan over medium heat, sauté garlic and onion in oil for 2 minutes. Add tomatoes and herbs; continue to cook for 5 minutes until the tomatoes soften.



Season with salt, pepper and sugar.



Serve with pasta of your choice.



AI have a tendency to be anemic, so I need to eat iron-rich vegetables. The whole point is not to mix those veggies (legumes and the orange veggies such as carrots and sweet potatoes) with dairy products, because then the iron doesn't have any effect. So I took small elbow pasta, mixed it with tuna for protein, added peas and carrots and this sauce. It is extremely tasty, very very simple to make and very healthy. Give it a try! I recommend wholeheartedly!

3 cups all-purpose flour
1 1/2 teaspoons baking powder
2 tablespoons sugar

2 egg whites
Grated peel from medium 1 orange
1 cup low fat or skim milk
1 cup plain non fat yogurt
2 cups fresh or frozen blueberries
1.. In a medium mixing bowl, combine ingredients all ingredients, except blueberries, and beat just until smooth.
2.. Heat greased griddle or skillet over medium heat or to 375*F (190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.
3.. For each pancake, pour scant 1/4 cup batter onto hot griddle. Immediately sprinkle blueberries liberally over the pancakes. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown.
4.. Serve with desired accompaniments such as maple syrup and/or a generous sprinkling of powdered sugar.
Makes 16 pancakes.

Makes: One 13" x 10" x 21/2" Pan
Total Time: 2 Hours
For the Ricotta Filling -
Blend:
2 containers (15 oz. each) whole milk ricotta

1 t. kosher salt

For the Bolognese Sauce -

Add:
2 T. garlic, minced

Stir in:
3/4 lb. ground chuck
1/2 lb. ground pork
3 T. Italian herb seasoning blend
1 T. kosher salt
1 t. black pepper

Add and Simmer:
1 1/2 cups whole milk

Add and Simmer:
1 cup dry red wine

Stir in and Simmer:
4 lb. tomatoes, quartered
2 T. tomato paste
3 bay leaves
Salt and pepper to taste

Prepare; Assemble Lasagna with:
2 bunches Swiss chard, stemmed, blanched, and dried
1 lb. oven-ready lasagna sheets, parboiled
1 recipe Ricotta Filling
1 recipe Bolognese Sauce
2 1/2 cups mozzarella cheese,
shredded
2 1/2 cups Parmesan cheese, grated

For the Ricotta Filling -
Blend ricotta in a food processor until very smooth, about 2 min.; scrape
down sides. Add remaining ingredients; blend 1 minute.

For the Bolognese Sauce -
Saute onion, carrots, celery, and fennel in oil in a large saute pan over
medium heat. Cook until soft, 10-15 minutes.

Add garlic; saute another minute.

Stir in ground meats and seasonings; cook until meat is no longer pink, 8 -
10 minutes.

Add milk; simmer until liquid almost evaporates, 25 - 30 minutes.

Add wine and simmer until almost evaporated, about 20 minutes.

Stir in tomatoes, paste, and seasonings; reduce heat to medium-low. Cook
until sauce is very thick, 3 - 4 hours. Stir often to prevent it from
sticking or burning. Bring to room temperature before assembling lasagna.

To Assemble the Lasagna -
Prepare chard leaves, blanching in boiling water until wilted.

Parboil lasagna sheets just until pliable; transfer to foil-lined baking
sheet that's been coated with nonstick spray. Store sheets in single layers
separated by pieces of foil.

Assemble and bake lasagna as illustrated below. Unbaked, lasagna may be
wrapped in plastic and refrigerated for up to one day, or wrapped in foil
and frozen for up to one month (defrost completely before baking).

Melt; Set Aside:
12 oz. semisweet chocolate, broken up
1 1/2 cups sugar
12 T. unsalted butter, cut into tablespoons
Whisk Together:
1 cup all-purpose flour
1/4 cup cocoa, sifted
2 t. baking powder
1/4 t. table salt
Beat:
4 eggs, room temperature
2 T. instant espresso powder
1 T. vanilla extract

Preheat oven to 350°. Spray bottom and sides of a 9" x 13" pan with nonstick
cooking spray. Line with parchment; coat again.

Melt the chocolate, sugar, and butter in a double-boiler over simmering
water. Remove bowl; cool to room temperature.

Whisk together the flour, sifted cocoa, baking powder, and salt in a bowl;
set aside.

Beat the eggs, espresso, and vanilla until foamy in a stand mixer. Add
cooled chocolate mixture, scraping down the sides.
Fold half of the flour mixture into the chocolate batter. Add remaining
flour; fold in completely. Spread batter evenly into prepared pan.
Bake in center of oven 22-25 minutes or until a toothpick inserted in center
of pan is barely moist.
Remove from oven; cool completely. Run knife around inside edge of pan,
place rack on top of pan, and invert. Peel parchment away then invert again
onto a cutting surface.

With a sharp knife, trim off edges and cut brownies into 2" squares.

DIRECTIONS:

Crust:
Preheat oven to 350 degrees. Finely grind crushed cookies,
pecans and sugar in processor. Add melted butter and blend
until combined. Press crust mixture onto bottom and up sides
of 9-inch-diameter springform pan with 2 3/4-inch-high sides.

Filling:
Using electric mixer, beat cream cheese and sugar in large
bowl until light. Transfer 3/4 cup mixture to small bowl;
cover tightly and refrigerate to use for topping. Add
pumpkin, 4 tablespoons whipping cream, ground cinnamon and
ground allspice to mixture in large bowl and beat until well
combined. Add eggs 1 at a time, beating just until combined.
Pour filling into crust (filling will almost fill pan). Bake
until cheesecake puffs, top browns and center moves only
slightly when pan is shaken, about 1 hour 15 minutes.
Transfer cheesecake to rack and cool 10 minutes. Run small
sharp knife around cake pan sides to loosen cheesecake. Cool.
Cover tightly and refrigerate overnight. Bring remaining 3/4
cup cream cheese mixture to room temperature. Add remaining
5 tablespoons whipping cream to cream cheese mixture and
stir to combine. Press down firmly on edges of cheesecake to
even thickness. Pour cream cheese mixture over cheesecake,
spreading evenly. Spoon caramel sauce in lines over cream
cheese mixture. Using tip of knife, swirl caramel sauce into
cream cheese mixture.

(Can be prepared 1 day ahead. Cover and refrigerate.)

Release pan sides from cheesecake. Spoon sour cream into
pastry bag fitted with small star tip (do not stir before
using). Pipe decorative border around cheesecake and serve.

4 Granny Smith apples, each
cut into eight wedges
1/2 Cup dried cranberries
3 Tablespoons apple juice
1/4 Cup all-purpose flour

3/4 Teaspoon ground cinnamon
1/4 Teaspoon ground nutmeg
1-1/2 Tablespoons reduced-calorie margarine, chilled

Preheat oven to 375F. Combine first 3 ingredients (through apple
juice) in a bowl. Toss well and set aside.

Combine flour and next 4 ingredients (through nutmeg) in another
bowl. Cut in margarine with a pastry blender until the mixture
resembles coarse meal.

Place apple mixture in an 8-inch square baking dish coated with
cooking spray; sprinkle evenly with flour mixture. Lightly coat top
with cooking spray. Cover and bake at 375F for 30 minutes. Uncover
and bake an additional 20 minutes or until apples are tender.
Serves 6.

I was watching Food Network's Top 5 yesterday and they showed a cake that
Martha Washington used to make that uses 40 eggs. I did a little research and
found Martha's recipe. Thought I would share it. How recipes have changed
over the years. Recipe is in the original instructions. The cake was so dense
that the fruit staying in place and did not sink to the bottom of the pan.
Martha Washington's Great Cake
(One of Mrs. Washington's favorite recipes)
Take 40 eggs and divide the whites from the yolks and beat them to a froth.
Then work 4 pounds of butter to a cream and put the whites of eggs to it a
Spoon full at a time till it is well work'd. Then put 4 pounds of sugar finely
powdered to it in the same manner then put in the Yolks of eggs and 5 pounds of
flour and 5 pounds of fruit. 2 hours will bake it. Add to it half an ounce of
mace and nutmeg half a pint of wine and some fresh brandy.
Notes on making Martha Washington's Great Cake:
In making the great cake, Mount Vernon's curatorial staff followed Mrs.
Washington's recipe almost exactly. Where the recipe called for 5 pounds of fruit,
without specifying which ones, 2 pounds of raisins, 1 pound of currants, and 2
pounds of apples were used. The wine used was cream sherry. Since no pan
large enough was available to hold all the batter, two 14 layers were made and
stacked (note: the original was one single tall layer). The layers were baked in
a 350 degree oven for 1.5 hours. Should be iced with a very stiff egg-white
based icing, flavored with rosewater or orange-flower water.

Ingredients:
1 1/3 cup granulated sugar
1 (7 oz.) jar marshmallow creme
2/3 cup evaporated milk
1/4 cup butter

1 cup milk chocolate pieces

8 Tart Apples peeled and sliced
1 1/4 teaspoons ground cinnamon
1/4 teaspoon allspice

crockpot. Combine milk, softened butter, sugar, eggs, vanilla, and the 1/2 c Bisquick.
Spoon over apples.

Combine the 1 cup Bisquick and brown sugar. Cut the cold butter into mixture until
crumbly. Sprinkle this mixture over top of apple mixture.

Cover and cook on low 6-7 hours or until apples are soft.

Some other reasons to be grateful if you grew up speaking English:

1 1/2 lb beef flank steak
1 onion, sliced
1 green pepper, cut into strips
1 red pepper, cut into strips
1 jalapeno pepper, chopped

1 tsp ground cumin

8 oz can chopped tomatoes
A dozen 8" flour tortillas

Cut flank steak into 6 portions. In any size crock pot,
combine meat, onion, green pepper, red pepper, jalapeno
pepper, cilantro, garlic, chili powder, cumin, coriander
and salt. Add tomatoes. Cover and cook on low for 8-10
hours or on high 4-5 hours. Remove meat from crock pot
and shred. Return meat to crock pot and stir. To serve
fajitas, spread meat mixture on flour tortillas and add
favorite toppings. Roll up tortillas. Serves 6-8.

Ingredients


2 teaspoons olive oil
12 ounces boneless skinless chicken breasts, bite-size pieces
1 can (14 1/2 ounces) Hunt's® Petite Diced Tomatoes in Juice, undrained
1/4 cup French salad dressing
1 tablespoon seasonsed rice vinegar
1 package (5 ounces) fresh baby spinach
2 mangoes, cut bite-size pieces
2 medium avocados, cut bite-size pieces
4 slices Armour® bacon, cooked, crumbled


Directions



1.. Heat oil in a large skillet over medium-high heat. Add chicken; cook until lightly browned, stirring occasionally, about 4 minutes.

2.. Add tomatoes; bring to a boil. Reduce heat to low. Cook, uncovered, about 5 minutes or until chicken is no longer pink. Add dressing and vinegar; heat through.

3.. Arrange equal amounts of spinach, mangos, and avocados on each serving plate. Top each with chicken-tomato mixture. Sprinkle each with bacon. Serve immediately.

cauliflower, Brussels sprouts and kale), cabbage provides significant amounts
of fiber, vitamin C and an important class of nutrients called indoles.
Research on indoles is focusing on their ability to protect against both breast and
prostate cancer. An additional bonus in this savory side dish is the
mushrooms. Use the more flavorful (and healthful) shiitake mushrooms if you can find
them.

1 small green cabbage, cored and diced, about 6 cups
1 cup vegetable broth
1 tablespoon extra-virgin olive oil
1 medium onion, diced
1/2 pound mushrooms (shiitake, if possible)
1 1/2 tablespoons cornstarch mixed into 1/4 cup cold water
1 tablespoon fresh dill weed, chopped, or 1 teaspoon dried
1/2 teaspoon paprika
Salt and black pepper to taste

1. In a covered pot over high heat, steam the cabbage in the stock for 5
minutes until it is just wilted and still bright green. Remove from heat and
remove cover.
2. While the cabbage cooks, heat the olive oil in a large skillet or wok, and
sauté the onion and mushrooms until they brown. Add the cabbage and heat
through, mixing well.
3. Stir the cornstarch mixture well and add it to skillet. Bring mixture to
boil, stirring, until liquid thickens. Reduce heat and season to taste with
dill, paprika, salt and pepper.

The Mammogram Appointment...

I actually kept my mammogram appointment.  I was met with,
"Hi, I'm Belinda!"  this perky clipboard carrier smiled from ear to ear,
tilted her head to one side and crooned, "All I need you to do is step into
this room hereee, strip to the waist, thennn slip on this gown.  Everything
clearrr?"

I'm thinking, "Belinda.... try decaf  this ain't rocket science."

Belinda skipped away to prepare the chamber of horrors.
Call me crazy, but I suspect a man invented this machine.  It takes a
perfectly healthy cup size of 36-B to a size of 38-LONG in less than 60
seconds.

Also, girls aren't made of sugar and spice and everything
nice... it's Spandex.  We can be stretched, pulled and twisted over a cold
4-inch piece of square glass and still pop back into shape.

With the right side finished, Belinda flipped me
(literally) to the left and said, "Hmmmmm, Can you stand on your tippy toes
and lean in a tad so we can get everything?"

"Fine," I answered.  I was freezing, bruised and out of
air, so why not use the remaining circulation in my legs and neck and
finish
me off?  My body was in a holding pattern that defied gravity (with  my
other boob wedged between those two 4" pieces of square glass) when we
heard, then felt, a zap!

Complete darkness and the power went off!

"What?"  I yelled.

"Oh, maintenance is working.  Bet they hit a snag."

Belinda headed for the door. "Excuse me!  You're not leaving me in this
vise
alone, are you?" I shouted.  Belinda kept going and said, "Oh, you fussy
puppy... the door's wide open so you'll have the emergency hall lights.
I'll be righttt
backkkk."

Before I could shout, NOOOOOO!" she disappeared.

And that's exactly how Bubba and Earl, maintenance men
extraordinaire, found me, half-naked and part of me dangling from the Jaws
of Life and the other part smashed between glass!

After exchanging polite "Hi, how's it going" type greetings, Bubba
(or possibly Earl) asked, to my utter disbelief, if I knew
the power was off.

Trying to disguise my hysteria I replied with as much
calmness as possible. "Uh, yes... yes I did, thanks."

"You bet, take care," Bubba replied and waved good-bye as
though I'd been standing in the line at the grocery store.

Two hours later, Belinda breezes in wearing a sheepish
grin and making no attempt to suppress her amusement, she said, "Oh, I am
soooooo sorry!  The power came back on and I totally forgot about you!
And silly me, I went to lunch.  Are we upset?"

And that, Your Honor, is exactly how her head ended up
between the clamps......

4 beef rib eye steaks (6-ounces) cut 1-inch thick
3 Tbsp. Cajun spice mix

When wine starts to bubble, return steaks to skillet. Reduce heat to a simmer. Cover and cook for 5 minutes.
Remove steaks to platter and keep warm. Boil liquid until reduced by half. Spoon sauce over steaks and serve

Fall time is a time of the year that I truly enjoy. Nature all around begans
to change. I love looking at the different hues of greens to browns as the
leaves began to change in color and fall to the ground. The temperature also
starts to declining and there is a briskness in the air. It also is harvest
time, the time to reap that which has been planted.
I am struck with the knowledge that all of us have somewhat planted a
garden, whether a natural garden or a garden of seed thoughts in the minds of
others. When harvest time comes if we have planted weeds or seeds of distruction,
this will be what we reap. But if we have planted grain and seeds of love,
our bounty will be overflowing with corn and endless love. Think on this as you
plant.
