I have enjoyed all of the wonderful recipes and information that I've gotten over the past months.I have learned so much.
I need to go no mail for a few weeks. I'm going to visit my Aunt in California. Is there any way that I can go no mail for that time and then get back onto the group ?

30-Minute Saucy Ham & Asparagus
Here is a delicious, quick-fix entree that's special enough for company but simple enough to make any night of the week. Fresh asparagus, which is currently at the peak of its season, adds a real taste of spring!

Ingredients
24 fresh asparagus spears

3 tablespoons butter

1/4 cup all-purpose flour

1 1/2 cups milk

1 cup shredded Swiss cheese, divided

1/8 teaspoon nutmeg

1/8 teaspoon cayenne pepper

Black pepper to taste

1 pasteurized egg yolk or equivalent
amount of egg substitute

24 thin slices cooked ham


Prep Time: 22 minutes
Cooking Time: 5 minutes
Makes 6 servings



Directions
1. Arrange asparagus in an 11- x 7-inch microwave-safe dish. Add 2 tablespoons water. Cover with plastic wrap. Microwave until crisp-tender, about 2 to 5 minutes; drain. Let stand to cool slightly.
2. Meanwhile, melt butter in a medium saucepan over medium heat. Whisk in flour until smooth. Add milk gradually, whisking continually. Cook, stirring continually, until thickened, about 5 minutes. Turn off heat. Add 3/4 cup cheese, nutmeg, cayenne pepper and black pepper and whisk until cheese is melted. Stir in egg yolk.

3. Preheat broiler. Wrap a ham slice tightly around each asparagus spear. Arrange in a single layer in a 13- x 9-inch baking dish. Pour sauce evenly over the top. Sprinkle with remaining cheese. Broil 6 inches from heat until bubbly and lightly browned, about 5 minutes.

Per Serving: 249 Cal.; 19g Protein; 16g Fat; 10g Carb.; 765mg Sodium; 101mg Chol.; 1g Fiber.

Village Tip
When purchasing asparagus, choose firm, bright green stalks with tight tips. To store, wrap in a plastic bag for 3 to 4 days in the refrigerator or store upright in one inch of water, covering the container with a plastic bag.

2 & 3/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons cream of tartar
1 & 1/2 cups granulated sugar
In a large bowl, combine the ingredients with a whisk. Store the mix in an airtight container.

Attach these instructions to the jar:


Snickerdoodles
1 cup butter or margarine, softened
2 eggs
1 package Snickerdoodle Mix
1/2 cup granulated sugar
1 tablespoon cinnamon
Preheat oven to 350 degrees F.
In the large bowl of an electric mixer, cream the butter until light; add the eggs, & beat on low speed until the mixture is smooth. Add the Snickerdoodle Mix, & continue to beat on low speed until the dough begins to form. Combine the sugar & cinnamon in a small bowl. Shape the dough into 1-inch balls & roll in the cinnamon-sugar blend. Arrange on ungreased baking sheets 2 inches apart, & bake for 16 to 19 minutes or until light tan. Transfer to wire racks to cool. Snickerdoodles are soft German sugar cookies dusted with cinnamon & sugar.

Makes about 5 dozen cookies

If you're like most people, you're probably confused about trans fats. Which foods have them, and which don't? Which are the worst foods, which are the best?

Print out this list to become a wiser, safer shopper. And remember to check the food labels. Manufacturers will probably begin reducing the amount of trans fats in packaged foods during the next few years, so this information may change.

The Top 10 "Trans Fat" Foods:


1. Spreads. Margarine is a twisted sister -- it's loaded with trans fats and saturated fats, both of which can lead to heart disease. Other non-butter spreads and shortening also contain large amounts of trans fat and saturated fat:

a.. Stick margarine has 2.8 grams of trans fat per tablespoon, and 2.1 grams of saturated fat.
b.. Tub margarine has 0.6 grams of trans fat per tablespoon, and 1.2 grams of saturated fat.
c.. Shortening has 4.2 grams of trans fat per tablespoon, and 3.4 grams of saturated fat.
d.. Butter has 0.3 grams of trans fat per tablespoon, and 7.2 grams of saturated fat.
Tip: Look for soft-tub margarine, because it is less likely to have trans fat. Some margarines already say that on the packaging.


[Important note: When you cook with margarine or shortening, you will not increase the amount of trans fat in food, says Moore. Cooking is not the same as the hydrogenation process. "Margarine and shortening are already bad, but you won't make them any worse."]


2. Packaged foods. Cake mixes, Bisquick, and other mixes all have several grams of trans fat per serving.


Tip: Add flour and baking powder to your grocery list; do-it-yourself baking is about your only option right now, says Moore. Or watch for reduced-fat mixes.


3. Soups. Ramen noodles and soup cups contain very high levels of trans fat.


Tip: Get out the crock-pot and recipe book. Or try the fat-free and reduced-fat canned soups.


4. Fast Food. Bad news here: Fries, chicken, and other foods are deep-fried in partially hydrogenated oil. Even if the chains use liquid oil, fries are sometimes partially fried in trans fat before they're shipped to the restaurant. Pancakes and grilled sandwiches also have some trans fat, from margarine slathered on the grill.


Examples:

a.. Fries (a medium order) contain 14.5 grams.
b.. A KFC Original Recipe chicken dinner has 7 grams, mostly from the chicken and biscuit.
c.. Burger King Dutch Apple Pie has 2 grams.

Tip: Order your meat broiled or baked. Skip the pie. Forget the biscuit. Skip the fries -- or share them with many friends.


5. Frozen Food. Those yummy frozen pies, pot pies, waffles, pizzas, even breaded fish sticks contain trans fat. Even if the label says it's low-fat, it still has trans fat.

a.. Mrs. Smith's Apple Pie has 4 grams trans fat in every delicious slice.
b.. Swanson Potato Topped Chicken Pot Pie has 1 gram trans fat.
c.. Banquet Chicken Pot Pie has no trans fat.

Tip: In frozen foods, baked is always heart-healthier than breaded. Even vegetable pizzas aren't flawless; they likely have trans fat in the dough. Pot pies are often loaded with too much saturated fat, even if they have no trans fat, so forget about it.


6. Baked Goods. Even worse news -- more trans fats are used in commercially baked products than any other foods. Doughnuts contain shortening in the dough and are cooked in trans fat. Sunshine Cheez-It Baked Snack Crackers have 1.5 grams per 27 crackers.

Tip: Think pretzels, toast, pita bread. Actually, pita bread with a little tomato sauce and low-fat cheese tastes pretty good after a few minutes in the toaster oven.


8. Breakfast food. Breakfast cereal and energy bars are quick-fix, highly processed products that contain trans fats, even those that claim to be "healthy."

a.. Kellogg's Cracklin' Oat Bran Cereal has 1.5 grams per 3/4 cup serving.
b.. Post Selects Great Grains has 1 gram trans fat per 1/2 cup serving.
c.. General Mills Cinnamon Toast Crunch Cereal has .5 grams per 3/4 cup serving.
d.. Quaker Chewy Low Fat Granola Bars Chocolate Chunk has .5 grams trans fat.

Tip: Whole-wheat toast, bagels, and many cereals don't have much fat. Cereals with nuts do contain fat, but it's healthy fat.


9. Cookies and Candy. Look at the labels; some have higher fat content than others. A chocolate bar with nuts -- or a cookie -- is likely to have more trans fat than gummy bears.


a.. Nabisco Chips Ahoy! Real Chocolate Chip Cookies have 1.5 grams per 3 cookies. If you plow through a few handfuls of those, you've put away a good amount of trans fat.

Tip: Gummy bears or jelly beans win, hands down. If you must have chocolate, get dark chocolate -- since it's been shown to have redeeming heart-healthy virtues.


10. Toppings and Dips. Nondairy creamers and flavored coffees, whipped toppings, bean dips, gravy mixes, and salad dressings contain lots of trans fat.


Tip: Use skim milk or powdered nonfat dry milk in coffee. Keep an eye out for fat-free products of all types. As for salad dressings, choose fat-free there, too -- or opt for old-fashioned oil-and-vinegar dressing. Natural oils such as olive oil and canola oil don't contain trans fat.


Can you eliminate trans fats entirely your diet? Probably not. Even the esteemed National Academy of Sciences stated last year that such a laudable goal is not possible or realistic.


Instead, take this suggestion from Cindy Moore, MS, RD, director of nutrition therapy at the Cleveland Clinic Foundation: "The goal is to have as little trans fat in your diet as possible. "You're not eliminating trans fats entirely, but you're certainly cutting back."

1 (18 1/4-ounce) package butter-flavored cake mix

2 cups sugar

1 (8-ounce) carton sour cream

1 (12-ounce) package frozen coconut, thawed

1 (12-ounce) carton Cool Whip, thawed

Prepare cake according to directions, making 2 layers. Cool completely. Slice
both layers horizontally making 4 thin layers. Combine sugar, sour cream, and
coconut. Blend well and chill, reserving 1 cup. After chilled, spread on top
and side of each layer as you stack. Now add reserved portion to Cool Whip.
Blend until smooth and ice cake all over. Place in airtight container and
refrigerate 2 or 3 days.

CRUST &TOPPING
One 7-ounce package shredded coconut
1/2 pound (2 sticks) margarine or butter, softened
1/2 cup firmly packed brown sugar
1-1/2 cups Quaker® Oats (quick or old fashioned, uncooked)
3/4 cup all-purpose flour
1/2 cup chopped nuts
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda

FILLING
Two 8-ounce containers lemon low-fat yogurt
One 8-ounce container regular or light frozen whipped topping, (thawed)
2 teaspoons grated lemon peel

Lemon twists (optional)



1.. Heat oven to 350°F. Place coconut in single layer in 13 x 9-inch baking pan. Bake 18 to 20 minutes or until coconut is lightly toasted, stirring after 12 minutes. Cool completely; set aside.

2.. For crust, beat margarine and sugar in large bowl until creamy. Add combined oats, flour, nuts, cinnamon and baking soda; mix well. Reserve 1 cup coconut for topping. Stir remaining coconut into crust mixture. Press dough evenly onto bottom of ungreased 13 x 9-inch baking pan. Bake 18 to 20 minutes or until golden brown. Cool completely on wire rack.

3.. For filling, combine all ingredients in large bowl. Spread mixture evenly over cooled crust. Sprinkle with reserved coconut, pressing lightly. Cover and refrigerate 3 hours or as long as overnight. Cut into squares; garnish with lemon twists, if desired. Store covered in refrigerator.

Hi to everyone,

This is Carol from Mumbai in India. I was amused reading the remarks from
Anne and Laurie regarding the cooking of rice. We eat a lot of rice here,
in fact, its a must on most lunch tables if not for dinner. My mum taught
me both methods - to cook rice with a pan of water as well as the pressure
cooker method and I find with experience that the p.cooker method works
best.

You can try out what ever type of rice you get, usually its basmati or any
long grain. The trick is to soak the rice before use for at least 5 mins
before start, then put in the soaked rice in the pressure cooker on med.
flame, add enough water that will come up to 1/2 an inch above the level of
rice. (Dont forget to add proportionate salt) Sometimes if the rice is too
new the rice might come out sticky. Then close the cooker lid with the
pressure valve on. Let it cook for just the time that it takes for the
pressure to sound, what we say as 'one whistle' and turn off the heat. Let
it sit few mins as the rice is still cooking. Then you can serve after
fluffing the grains with a fork. If you like, you might add a tsp of oil to
the water and a few drops of lemon juice which keeps the rice white and
firms up each grain. I have taught my husband this same method and the
funny thing is - all our guests swear his turns out better than mine. He
even makes pilafs and fried rice using
this method.

You can use this method even when you guests have arrived and you are not
sure how much to cook for as its so quick.

Fruit Pizza

1 roll of sugar cookie dough

Spread cookie dough into a pizza pan. You may want to oil your hands to do
this. Bake at 350úuntil done about 10 min. Let cool and then top with Cream
filling.

CREAM FILLING

8oz cream cheese (soften by taking from refrigerator and let stand)
add "marshmallow fluff" to taste (start with 4-5 tablespoons and experiment
from there)
1/4 teaspoon Vanilla
1 teaspoon Cinnamon
Mix all together then spread on top of the cooled cookie dough. Top with
fruit of your choice.


FRUIT TOPPERS
Any fruit you choose. If you use apples , pears, peaches or bananas sprinkle
lemon juice on them before putting them on the Pizza so they won't turn
dark.
Cover with plastic wrap and chill until serving time.

The filling makes a great dip for dipping fruits also
- Dip your favorite fruit or fruits in the Dip (like pineapple chunks,

CREOLE STYLE!

1 thawed turkey
2 full fresh garlic cloves, minced
2 large white onions per 10 pound of turkey
3 bell peppers per 10 pounds of turkey
4 to 6 bay leaves....Do Not Eat Bay Leaves
Spicy Cajun Saesoning (Or Creole Seasoning).

Cajun All Seasoning.

Directions.

Pre heat oven to 350 degrees.
Pour Spicy Cajun Seasoning in a regular kitchen bowl.
Peel fresh garlic & place in a seperate bowl.
Peel onions & set aside.
Rinse bell peppers & set aside.

With a small kitchen paring knife cut a thinly approximately 1"
inch deep. Scoop a teaspoon of Spicy Cajun Seasoning & pour into
the slit in the turkey. omplete the process by inserting a fesh
clove of garlic into the slit. Repeat this process approximately
every 2" inches around the turkey.

When completed, place the turkey in a roster (Important The
roaster Must Have a lid that will Tightly Close).

Rub the entire turkey down, inside & out with Spicy Cajun
Seasoning. Dice onion & bell pepper. Stuff the inside of the turkey
with one diced onion, one diced bell pepper. Stuff the inside of the
turkey with 1 diced onion, & diced bell pepper, 2 bay leaves (Please
Remove bay leaves before serving)& a handful of garlic. Place the
turkey in a roaster, breast side up. Cover the turkey with the
remaining ingerdients.

3 Tbsp. Chambord liqueur
Topping:
8 oz. sour cream
1 Tbsp. sugar
1/2 tsp. vanilla
1 Tbsp. Chambord liqueur
1 cup fresh raspberries

Preheat oven to 350 degrees F.
To prepare crust, mix graham crackers crumbs, sugar & butter. Press mixture
firmly into bottom of 9" springform or cheesecake pan.
To make filling, mix cream cheese, sugar, vanilla & salt @ medium speed with
electric mixer. Add eggs & mix till well blended. Using fork, gently fold
Chambord into batter. Pour mixture into crust.
Bake for approximately 40 minutes or until golden brown. Let cool & remove
from pan.
To prepare topping, mix sour cream, sugar, vanilla & Chambord & spread evenly
over cheesecake.
Refrigerate for 4 hours or until firm. Top with fresh raspberries just before
serving.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients

4 Medium to Large Potatoes
2 Tablespoons Oil
1 Table Spoon Tomato Paste
½ Teaspoon Cumin
1 Teaspoon Paprika
½ Teaspoon Curry Powder
1 Pinch Cayenne
1 Teaspoon Garlic Salt
Freshly Ground Black Pepper

Method

Scrub Potatoes and Cut into Wedges about 1.5cm thick.
Mix through Oil and Tomato Paste and Place in a Baking Dish.

Mix Spices.
Sprinkle over Potatoes, turning to coat evenly.

Bake at 220°C for 20-25 minutes until golden and crunchy.

Make the most of this versatile kitchen appliance.

1. Disinfect and Deodorize Sponges
Soak a dirty sponge in water spiked with white vinegar or lemon juice, then

Cook vegetables partway in the microwave, before putting them on the
barbecue, to cut grilling time. Heat new potatoes for 2 minutes (prick them
first), and bell peppers for 1 minute. And why wait until your next campfire
to make s'mores? Put the marshmallows in the microwave for 30 seconds

7. Disinfect Plastic Cutting Boards
Wash the board well, rub it with the cut side of a lemon, then heat for 1
minute.

8. Roast Garlic
It takes 45 minutes to roast garlic in the oven but less than 8 in the
microwave. Slice off the top of the head to reveal all the cloves. Place the
head in a small, deep dish, season with salt and pepper, and drizzle with 2
tablespoons of good olive oil. Spoon 2 tablespoons of water into the bottom
of the dish, cover it with plastic wrap, and cook at medium power for 7 to 7
1/2 minutes. Let stand for a few minutes before unwrapping.

9. Warm Beauty Products
Warm up a hot-oil conditioning pack for your hair in about 10 to 20 seconds,
or briefly heat up a facial mask ⬠especially a creamy, moisturizing one.
(Stir the mask and test the temperature with your finger before applying.)
And if hot wax hardens when you're only halfway up your calf, reheat it in
the microwave. It's much less messy than using a double boiler.

10. Soften Brown Sugar
Keep the sugar in its plastic packaging, add a few drops of water, and heat
on medium for 10 to 20 seconds
