Clean the Pantry Swamp Soup
One can each of:
Cream of Celery
Cream of Broccoli
Cream of Mushroom
Cream of Potato
Cream of Onion
Cream of Chicken
Two soup cans of evaporated milk
½ cup chopped onion
½ cup bell pepper
Half stick of butter
Three eight ounce rolls garlic cheese
Three eight ounce rolls jalapeno cheese (I have a hard
time finding the jalapeno; I substituted the Mexican Velvetta
cheese.)
Weâll begin by sautéing our onions and bell peppers in a half
stick of butter. When your veggies are clear, add your preferred
meat in any amount. For instance, you could use chicken, shrimp,
crab or crawfish. I've diced up four grilled chicken breasts for us
to toss in today.
Now, add two cans evaporated milk along with a can each of
cream of celery, cream of chicken, mushroom, potato, and onion.
(On a side note hereâ¦try to find the low-sodium variety on those
cans. Itâs better for you.) Now, cut up eighteen ounces of garlic
roll cheese and eighteen ounces or jalapeno roll cheese. Add
these small bites of cheese and bring the heat up slowly. Youâre
done. Let it simmer on the stove until itâs heated through and
throughâor until the family is banging on the table, whichever
comes first. This makes a big old pot! Salt and pepper to taste
and serve with your favorite hot bread! Thatâs good eating,
southern style...
