[world_famous_recipes] Autumn Potato Soup

Autumn Potato Soup
3 medium-sized potatoes, peeled and chopped
1 small onion, diced
1 cup water
1 teaspoon salt
3 cups milk
3 tablespoons butter, melted
2 tablespoons flour
1 cup shredded Swiss cheese
Place potatoes, onion and water in a heavy
saucepan, and bring to a boil. Simmer, covered,
until potatoes are tender. Remove from heat and
mash potatoes a bit; stir in milk.
Mix butter and flour together till no lumps remain;
(I use a little tiny whisk)
add to potato mixture. Cook over medium heat,
stirring constantly, until thickened.
Remove from heat and stir in cheese.
Yield: 4 - 6 servings
