[world_famous_recipes] Teenie tacos.............
Out of everything I cook for my grandkids, "teenie" tacos and beans are their
all time favorite. I have kind of a bazaar "recipe" that isn't really a
recipe. It is more a guide to everyone's tastes. As I've posted before, I batch
cook, but you can decide the amt. right for you. The amt.s here do well for 4
people. In my case, two adults and two children under 7. It freezes very
well and it is SO great to pull a big container out of the freezer, thaw and
heat. I normally prepare 2 and 1/2 times this much and it gets me through 2
meals.
Taco Bell's little taco shells
To 2 1/2 lb. hamburger meat (browned and drained) add:
2 pkg. taco seasoning - use as directed
A few shakes of red pepper flakes
1 can refried beans w/green chilies
Salsa to taste
1 can pinto beans drained and partially broken down with a potato masher
1. cup chopped onions
Blend ingredients well heating to a simmer. You must stir often to avoid
sticking. I keep it slow cooking for at least an hour. There is certainly
enough to do in the kitchen that I can "stand by for stir duty."
I offer bowls of sour cream, chopped ripe tomatoes, shredded cheese, sliced
black olives, salsa, finely sliced lettuce and guacamole.
I make them feel extremely grown up by mixing a pitcher of sangria with white
grape juice substituting for the wine.
I am convinced if I had the big taco shells they would turn up their
noses........at least at this stage of their gastronomic preferences.
Haul out LOTS of napkins and use a throw away tablecloth. It gets messy on
Mexican food night!
This is also fun as grown up snack food when visiting with friends on
Saturday night. We just don't tell the little ones! lol
