Mexican Wedding Cakes...
1 cup butter (softened) DO NOT SUBSTITUTE SHORTENING!
(One quarter) 1/4 cup granulated sugar.
2 teaspoons vanilla
1/4 (One quarter)teaspoon salt
2 cups flour
2 cups finely chopped nuts
Confectioner's sugar
1. Cream butter well..add sugar, beat until light and fluffy ..add vanilla and salt
2. Stir in the flour and nuts...mix well
3. Form the dough into a large ball, wrap in wax paper and refrigerate for 1 hour
4. Preheat oven to 375 degrees
5. Shape dough into 1 inch balls place on un-greased baking sheet 1 inch apart
6. Bake balls 15 minutes or until balls are cooked BUT NOT YET BROWN
7. Remove from oven and let cool a few minutes on baking sheets..While
still warm roll well in Confectioner's sugar..
Store in airtight container...can be rolled in Confectioner's sugar again before being served............
