Stuffed Pork
Ingredients
140g/5oz pork steak (or larger)
salt and freshly ground black pepper
1 tsp sage leaves, chopped
2 baby leeks, blanched
55g/2oz smoked cheese, grated
1 tbsp vegetable oil
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the pork between two sheets of cling film and flatten out using
a rolling pin or meat mallet.
3. Remove the cling film, season generously and then sprinkle the sage
leaves over the flattened steak.
4. Top with the leeks and sprinkle half the cheese over.
5. Roll the steak up to make a long sausage shape and use 2-3 cocktail
sticks to secure.
6. Heat the oil in a non-stick frying pan and sear the stuffed pork for
1-2 minutes on each side.
7. Transfer to the oven and cook for 8-10 minutes, or until cooked through.
8. Remove from the oven, sprinkle the remaining cheese over and return
to the oven and cook for a further 1-2 minutes or until the cheese has
melted.
9. Remove from the oven and transfer to a serving plate.
