[world_famous_recipes] EXCELLENT: korean style pork tenderloin
My version of pork tenderloin! I think it's great! Tastes great with
slightly sweetened spaghetti squash with a lil brown sugar, or sweet
broccolini.
1/3 cup low-sodium soy sauce
2 Tbls. sugar
1 Tbls. minced fresh peeled ginger
3 Tbls. rice vinegar
1 Tbls. dark sesame oil
1/4 teas. crushed red pepper
4 garlic cloves, minced
1 1/2 lbs. pork tenderloin, trimmed
Cooking spray
Combine 1st 7 ingredients in a large zip-top plastic bag, add pork,
marinate 8 hours turning occasionaly.
Preheat oven to 425*
Heat a large ovenproof skillet coated with cooking spray over medium
high heat. Remove pork from bag, reserving marinade. Add pork to pan,
cook 6 minutes, browning all sides.
Place pan in oven; bake at 425* for 15 min. or until meat thermometer
registers 160* (medium) or until desired degree of doneness. Let
stand 5 minutes before slicing.
Bring reserved marinade to a boil in small saucepan. Reduce heat,
simmer for 5 minutes.
Cut pork into 1/4" thick slices, and serve with sauce, and long grain
sticky rice.
